immediate post-birth cooking angst!

Hello all

I'm having a CS next Monday, I have a DS (2) and a DS who is really not good in the kitchen . I love my food! and will be hungry as a bear post-birth and particularly with BF.

Any tips on easy-to-assemble, quick but nutritious food? Last time I ate a hell of a lot of fantastic cheese that was forbidden in pregnancy with fig jam etc on bread and completely ballooned to size 20

was thinking of baked potatoes, healthy sandwiches etc. but wanted some variety. any tips?

loads of veg and tomato based soups

bolognese - with lean mince

cheese sauce with marg and low fat cheese

can do a bit of cooking this week and freeze

ready washed salad with a tin of tuna and some sweetcorn

fresh egg pasta with sauce

veg lasagne, can be prepared in advance, buy packs of ready prepared veg to make it even easier

before my last cs I cooked and froze

Lasagne
Ratatouille
Soup...potato and leek, pumpkin, and tomato
Homemade pizza
Commercial pizza
Chickpea casserole
Vege casserole

I think that was all, I didn't end up doing nearly enough, it was great the week I got home but could have done with a supply that lasted a bit longer....

Sorry - am posting WAY too late for you, but if you get the chance, cook a bolognese and a casserole and bung in the freezer - that way you can just get DH to reheat and then you can eat!

I'm in the same position, except my c/s is on Friday. I've been stocking my freezer with slow cooker goodies like mushroom and chestnut stroganoff, home made baked beans, curry etc

I've also stocked up on tinned/longlife stuff such as gnocchi (only takes about 3 mins to cook) Dolmio stir in sauces, tinned soup, long life tuna salad, low fat snack bars etc. We don't normally eat that kind of food but I figure needs must with a newborn and toddler!
