anyone got a really good recipe for chocolate brownies?

The one from my cookery book always comes out very dry - I have tried and tried but they are always so dry....

so I am on the search for a better recipe....

anyone?

I haven't tried Suzywong's version yet, but I always make this one.

CHOCOLATE BROWNIES

PREPARATION TIME : 15 MINS + COOLING
COOKING TIME: 25-30 MINS
MAKES 16 BROWNIES

INGREDIENTS

100g/4oz PLAIN COOKING CHOCOLATE
100g/4oz UNSALTED BUTTER
50g/2oz FLOUR. SIFTED
100g/4oz SUGAR
1 TSP BAKING POWDER
PINCH OF SALT
3 EGGS
100g/4oz PECAN NUTS, CHOPPED

  1. Preheat the oven to 180C/350F/Gas mark 4. Line a 20cm/8in square baking tine with greaseproof paper. Melt the chocolate and butter together in a double boiler or in a bowl set over a pan of gently simmering water
  2. Put the flour, sugar, baking powder and salt in a mixing bowl. Pour the chocolate over the top and mix well. Stir in the eggs and nuts then pour into the prepared tin
  3. Bake in the centre of the oven for 25-30 minutes. Allow to cool for 5 minutes, then cut into 16 equal pieces. Turn out onto a wire rack and allow to cool before serving

MICROWAVE VERSION

  1. Grease and line the base of a 23cm/9in round microwave-proof dish
  2. Melt the chocolate and better in a medium-sized microwave-proof bowl on medium high (75%) for 2 ½ minutes.
  3. Proceed as recipe. Pour mixture into prepared dish
  4. Cook on medium-high (75%) for 8 minutes until risen and spongy to the touch. Stand for 5 minutes then turn out.

honestly, you can't go wrong with Betty Crocker, £1.76 from the supermarkets, esp if you're short of time.

I made Suzy's brownies last week for the first time and got rave reviews from dh who thought they were the best I've ever made, and I've made a few, including Nigella's and Delia's, in the past.
