Would like to do meal planning but have no idea where to begin

I've started work, and though I only work 8.30 - 1.30, I do all the cooking, so, when I get home, I sometimes don't want to/can't be bothered to cook.

I would like to try food planning if possible, and would be happy to bulk cook etc and freeze, but tbh don't know where to start, AND I have quite fussy kids. DH is terrible so I'm mainly doing it for the children and I.

Here are the problems stopping me menu plan.,

DD1 won't eat meat (only in lasagne)
DD2 will eat meat
DD1 & DD2 won't eat fish
Neither like rice
Not keen on pasta
LOVE vegetables and fruit
DD2 doesn't like potatoes
Neither will attempt couscous

I'm betting that someone is going to tell me I'm onto a no hoper here

Oh and the only thing I won't eat is shellfish (mussels, oysters etc) and celery

What (seems) to be working for me is every time we have something that is really nice and everyone eats up (or can be adapted easily), I either write it on an index card, or write the book name and page I got it from on the card. I keep these in a kitchen drawer, and now I have about a dozen, I just pull out at the weekend 7 meals for the week ahead. I've written "Quick" and highlighted it on some so I know they are for nights when eldest is dashing off to her clubs.

Bozza, in reply to your post, I tend to cook different meals for myself and the dd's, but, DH tends to cook for himself

The dd's tend to eat

All of their meals with at LEAST two veg no matter what it is.

The eldest loves pies, lasagne, any fruit, any veg, garlic bread, sausages, fish fingers, chicken nuggets (home made), one of her faves is mince, potatoes and carrots done in the slow cooker all day so there is no gristl, jacket potatoes with beans and cheese, ham, chicken (very tiny amounts), chips, pancakes, yorkshire puddings etc, chicken burgers

DD2 is more fussy, out of the above list she doesnt like

Anything with gravy
Mashed or boiled potatoes
Pies
Lasagne
Beans
Spaghetti

But she will eat an abundance of veg and is quite happy to have a plate of veg, but, I don't like doing that.

I also ALWAYS have a fruit bowl full and encourage them constantly to eat from that.

Saying this, I need to lose weight and dd1 is putting on weight and I want to nip that in the bud before it comes a problem, not that I have discussed or mentioned it to her, she would quite happily live on junk food which is why I do her packed lunchs so I know what she is eating. But, it is the sheer volume that she eat, she can quite happily go to her aunties on a sunday, have a FULL Sunday dinner and then, as soon as she walks through the door she is asking if she can have something to eat.
