Does anyone have a recipe for an apple cake?
The apple cake from pret a manger is soooooo moist and yummy-i can't afford it so want to make my own!

  • 4 cups cooking apples, cut into chunks
  • 1 cup caster sugar
  • 2 cups flour
  • 2 tsp baking powder
  • 1 level tsp salt
  • 2 heaped tsp cinnamon
  • 2 tsp vanilla essence
  • 1/2 cup oil
  • 2 eggs
  • Mix all ingredients and pour into a greased and lined cake tin.
  • Bake for 40-50 minutes in a pre-heated oven (190)

Sorry it's in cups, I don't know how they translate. Also not made it myself yet so a bit vague on the details,but someone I know makes it all the time, and it's gorgeous!

thanks scared21!cup measures are fine-made a date cake from here last week with cups and t was yummyyyyyyyyyyyyyyyyy!
will elt you know how it turns out.

That sounds delicious, good luck. I might try it myself at the weekend, I imagine it would be great with hot custard or fresh cream...

Apple & Sultana Cake

Serves 8-10

8oz/225g chopped cooking apples
8oz/225g sultanas
8 fl oz/200ml milk
6oz/170g soft brown sugar
10oz/285g plain flour
6oz/170g butter
¾ oz/20g baking powder
2 tsp mixed spice
1 large free range egg, beaten
1oz/30g Demerara sugar

Heat the oven to 170°C/350°F/gas mark 4.

Mix together then apples, sultanas, milk and soft brown sugar.

In a separate bowl, rub together the flour, butter, baking powder and mixed spice. Combine the two. Add the beaten egg and mix well. If necessary, add more milk until you achieve a dropping consistency.

Scrape into a greased, lined 9in/22cm cake tin (I use 2 loaf tins as there?s a lot of mixture) and sprinkle over the Demerara sugar.

Bake for 1 hour (less in 2 tins) or until risen and golden, and a skewer comes out clean.

Serve warm with custard, or cold.

probably not - you'll probably have to lower the temp (can't advise further as have gas!)
