Jerusalem artichokes (I think). Veg box question!

Look like big lumps of root ginger, smell like potatoes?

What do I do with them?

I'm thinking that a veg box as a New Year resolution was a daft idea - months & months of weird looking stuff that turns out to be some dull tuber you can a) mash or b) soup - yes, black salsify, I do mean you!

I've found one recipe in my vegetarian cook books for Jerusalem artichokes provencale - doesn't sound great tbh.

Just bought a book on superfoods and you JAs are a superfood - low in calories, but high in in carbs, so low GI, good for diabetics, supposedly filling and satisfying....rich in potassium, useful quantities of iron and some B vits. However they only come up with 1 recipe which is for soup, with onions, veg stock, watercress & garlic croutons.
Do you want it?

Sometimes veg box suppliers have handy recipes on their website.

You can boil them - IIRC you don't need to peel first as the skins are supposedto slip off when cooked, but IIalsoRC that never works for me. But what I don't rememver os whether you can eat the skins or have to peel first.

You can also peel, parboil (or parboil, peel ), pat dry, smear with olive oil/butter/fat, sprinkle with seasonings of your choice (s&p/garlic/herbs/balsamic/chilli etc) and roast, just like any other roots - my fave way.

Veg boxes do get better when Spring comes, I promise! Most of the unidentified mud lumps can be roasted. Toss in olive oil and garlic (to add some flavour!) then chuck in a hot oven. Mind you, jerusalem artichokes are deeply horrid. I make soup out of mine and give it to my mother who is 87 and housebound and can't fight back. I suspect she puts it into the Richmond Council compost collection bin the second I leave!

JA is the root tuber of a plant in the sunflower family. The name is a distortion of Girasol - Italian for Sunflower. Ilijke them. And I like curly kale, too.
