this might be what you want - i've coped this from an earlier thread

Nigella's American Breakfast Pancakes These are theose thick, spongy pancakes that are often eaten with warm maple syrup and crisp fied bacon... You can easily cook these pancakes by dolloping the batter on a hot griddle pan (smooth side) or cast-iron pan, but i use a blin pan, one of my pet implements. 225g plain flour 1 tablespoon baking powder pinch of salt 1 teaspoon sugar 2 large eggs, beaten 30g butter, melted and cooled 300ml milk butter for frying Put all ingredients into blender and blitz. But if you do it by hand in a bowl, make a well in the flour, baking powder sugar and salt, beat in the eggs, melted butter and milk, and transfer to a jug; it's much easier to pour the batter into the pan than to spoon it. I like to leave the batter for 20 minutes before using, and you may then want to add more milk. When you cook the pancakes, all you need to remember is that when the upper side of the pancake is blistering and bubbling it's time to cok the second side, and this only needs about a minute, if that. Yummy - sometimes i make the batter the night before or just weigh out hte dry ingredients ready to blitz in the morning. And i use an ordinary ono-stick frying pan. And we have maple or golden syrup or nutella on them.

get into car, drive to local supermarket, purchase pack of aunt bessy's pancakes, bring home, heat, and eat.

I consider myself to be an excellent cook, but cannot make pancakes! lol

Can I second Nigella's pancakes. I make them every week for the DDs' breakfast and they are delicious and apparently foolproof. Even the first one. DD2 is a waif-like pathetic eater, but she will scoff a couple of these pancakes for breakfast. They are particularly good American style with maple syrup, bacon and soft fruit.

I don't bother with a blender, just make them in a large mixing bowl and then use a hand whisk to beat out any lumps before transferring into a jug. The batter keeps for 2 to 3 days in the fridge but you need to add a tiny bit of milk to it before using it and the pancakes are for some reason flatter by day 3!

Top tip: if you make them 2 or 3 days a week for your children, don't be tempted, as I was, to scoff them yourself.

wannaBe: I consider myself a lousy cook, but I can make these pancakes.
