Talk me through risotto

I've made risotto once. I was disgusting. I love to eat it and always order when we go out.
What are your best foolproofrecipes

I second (third?) Jamie Olivers recipe as a base, then add meat/fish/veg/whatever.

My top tip is to use the best stock you can (homemade if possible) because that makes all the difference to the flavour (wine goes without saying!)

Long time since this thread but oh well,

Very foolproof. Mushroom, garlic risotto

  1. Cook mushrooms and onions in butter/ frylight/ oil, add garlic, salt pepper.

2. Put them aside in a bowl.
3. Boil the kettle, and dissolve a chicken stock cube in a jug.
4. Pour rice into pan and fry for a minute with butter
5. Add the hot stock (double the amount of rice you have)
6. Boil, then simmer, stirring so often until you reach desired consistency. Usually 15-20 mins.

Add any cheese, etc you like! enjoy.

IMO if you use water it tastes absolutely vile. Always use stock
