Need ideas for easy, healthy meals (boring - sorry)

Basically am fed up with cooking the same things for my 2 children. ds aged 6 and dd aged 5. I would appreciate any new ideas for fairly quick and healthy meals that I can make. BH

my kids LOVE tiny baby prawns peeled of course, cooked in olive oil in a frying pan with one garlic clove in the oil. I bung it on some white or brown rice and spoon the garlicky oil over the top. No salt, no nothing else. I buy the frozen ready cooked tiny prawns, they defrost quickly and don't need much cooking just heating right through of course. Don't serve up the garlic clove or you'll get some moans. Then i just make cubes of tomato and cucumber into a salad as a side dish.

Are your children good eaters? We love cooked pasta tossed with a chopped mozzarella,one diced garlic clove, basil and as many chopped tomatoes as you like with seasoning and oil! There is hardly any cooking involved and so yummy!

Sort of. They like to eat little and often, so hardly eat big main meals. That's why I would like something that is quick!!!!

Seattle Spaghetti supper is my kids no. 1 fave:

1 tin creamed sweetcorn (green giant, tesco sell it)
1 tin tuna (drained)
half cup milk
half to 1 cup cheese (grated)

melt it all together and hey presto yummy pasta sauce. I usually give them brocolli or green beans with it.

Number 2 fave is kedgeree

Boil rice with fish stock cube. Boil 2 eggs at same time. Also at same time cook smoked haddock in microwave in a bit of milk.

Fry some onions. I usually put in some mild curry powder but that is optional.

Flake fish, chop eggs, mix with rice and onions and bobs your uncle. I usually give them broc with it.

It is truly yummy. For variety you can use chopped ham or fried lardons instead of the tuna. You are supposed to top it with cheesy breadcrumbs and grill it but that is far too much farting around for me!!

Fritters are my 'leftover special'

Make up a batter using a cup of flour, a teaspoon of baking powder and enough water to make the batter the consistency of thick pouring cream. Add some salt and pepper if you want. Add to this anything that takes very little time to cook. Drop spoonfuls in a hot pan, wait until the bubbles stop closing over, turn, cook for a few minutes more and drain.

Some ideas for flavourings are:
tin of sweetcorn
mushroom
ham
black pudding and spinach (Dh feeds this to the sluglet and she loves it)
spring onion and cold leftover potato
drained tuna
Scabby things that have been lurking in your fridge for a while and you're not sure what to do with them.
Leftover risotto

I've just made the fritters, with tuna and sweetcorn, for dd to take to nursery tomorrow. They are delicious. Please keep the recipes coming!
