Madeira Cake?

can I make a standard madeira cake into a chocolate cake by adding cocoa powder?

if so how much

if not, please may I have a good recipe (its for a birthday cake that shall be decorated with icing and sweets)

probably
try replacing 1oz of the flour with cocoa
OR add 1-2oz cocoa in addition to flour and add a bit of milk if it looks too dry.

(NB I normally make Victora sponge rather than madiera cake, because I'm lazy and can do it without a book - I use the 1oz flour/cocoa substitution method)

I would take out 3tbsp of flour and sustitute for cocoa powder. I have it in one of my books rather tahn random guessing if you want to be more precise. Cannot see why it wouldn't work.

I hunted through for a thread a few days ago where I posted a fab nigella recipe but it has vanished. Will hunt that out too if you want.

would anybody care to guestimate quantities required for a 10" sq cake PLUS a 7" round cake (ie 1 victoria sandwich tin)

am thinking possibly 12,12,12,6?

Nigella's recipe for Madeira cake is delish, the timing is off, it needs almost 10 more minutes in my stove. I would look that one up Twig. Maybe she has substitutions--I make it in a loaf type pan though.

can't find it on her website and don't own any delia books

it has to be a 10" square plus 7" s/w tin I'm afraid .. not optional to change

I have the American Version of Nigellathis is for a 9 X 5 inch loaf pan. You will have to modify to make enough for all your layersif you double it, you won't go wrong and you can just pour the leftover batter into another tin for yourself.

1 cup butter
1/3 cup sugar, plus xtra for sprinkling
Grated zest and juice of one lemon
3 large eggs
1 1/3 cups self-rising cake flour
1/2 cup all purpose flour

Cream butter and 3/4 cup sugar, add lemon zest. Add eggs one at a time with a tablespoon of flour after each. Gently mix the balance of the flour and finally lemon juice. Pour into pan, sprinkle sugar on top. Bake for 1 hour at 350 degrees (my oven wants 68 minutes or so....). Cake tester needs to come out clean. Good luck!!!

delia all in one
two 7 inch sandwich tins

4oz 110g sr flour
1 teaspoon baking powder
4oz 110g soft butter or margarine
4oz 110g caster sugar
2 size 1 eggs
2-3 drops vanilla essence

put all in ixing bowl and whisk with electric whisk for one minute

divide between tins

bake in oven 325 f 170 c gas3 for 30mins
