More batch cooking Qs - vegetarian dishes and pasta bakes

Hello

I've been reading the batch cooking threads (and emptying my freezer in anticipation!) but need some specific advice / recommendations...

  1. DH and I have been eating progressively less meat and more vegetarian dishes lately. I'd like to have veggie food ready to go from the freezer but I'm concerned that dishes like stews / curries / etc will go mushy and sad-looking after being frozen. Is that a problem and can anyone recommend some good, cheap, reliably freeze-able veggie recipes?
  1. Pasta bakes are a good option that all the family will eat. Most of the recipes say 'freezeable' but at what stage should I actually freeze them- most of them are topped with cheese and baked. Does it get frozen before or after the cheese has been put on and baked? and do I need to put extra sauce on the ones that go in the freezer to prevent them going dry?

  1. Don't think it matters when the cheese is added, you can freeze cheese. I made a double batch of this bake [[https://m.youtube.com/watch?v=HNLxgH3Sc-4]] yesterday and froze one of them to bung in the oven at some point.
