Anyone have a great tried and tested date cake recipe?my kids love dates and I need a decent recipe.....

I use this one, which is a banana/date loaf, but I'm not sure whether it's what you mean. It comes out moist and spicy.

Thanks guys-i was actually after a date cake but this looks great! we make banana loaf too so will definetly give it a try.
though as completely t-total,any suggestions to what Ican replace the beer with?

Hmmm, you could probably use water?

If it helps, though, the booze in the beer totally evaporates, there is no alcohol in the cake. (You might not want beer in the house, though, which I can understand.)

The resulting cake is just rich and dark, doesn't taste like bananas at all.

that sounds sensible-and yeah-I just don't have alcohol in the house.

Grandma's Date & Walnut (I love it and I don't even like dates!)

prepare 1/2 lb dates in a basin with 1tsp bicarb, pour over 3/4 cup of boiling water and leave standing until needed

1 3/4 cup plain flour
2 oz marg
3/4 cup sugar
chopped walnuts (don't know how much??)
1 egg

mix all ingredients except the egg & dates then add the beaten egg, the dates & the water

pour into a loaf tin & bake approx 45 min on 160C (she's not sure about the time though so stick a fork in after 45 min and see if it comes out clean)

when it's done, slice it up and spread a bit of butter on it to serve for afternoon tea!

can you ask her how I would change the quantities if i wanted to make a bigger cake? my kids especially the eldest(ie my dh!)just guzzled the loaf up!!

um, I would guess you could just try doubling everything? I don't know how long you'd have to cook it for though. The thing is, she's 85 and she's been making it the same way for the last 60 years so I have a feeling asking her how to change it would be a bit tricky. I was amazed she even had a recipe!

gosh thats amazing!!! you're right-i know my gran was a fab cook,but se had no exact measurements.it was a pinch of this and a handful of that!!! i'm so pleased she had the recipe.only change for me was that i cooked it for longer.
soda bicarbonate-do you reckon you double on that too?

ooh, good question, I don't know. I will ask her, I promise. And I will pass on the chicken soup recipe when I get my hands on it one of these days.
