Vegbox full of weird stuff I have no hope of getting family to eat

I ordered one of these for the first time and it's due on Tuesday. Have just checked the website for what the box will contain and was horrified to see that while all other boxes have things like potatoes, carrots, parsnips, swede etc, I have none of this but instead mine contains 2 types of brocolli, artichoke and beetroot and celery.

As a family we are not great veg eaters and I though by getting the biggest box with added fruit it would have lots seasonal veggies I could roast or make soups with to improve our diets, but it's not even got spuds. I will have a real tough time getting DH to eat anthing in this one.

DH was not pro vegbox before hand, so my chance of getting another next week will be zero unles I can convince him these veggies are 'worth it'

Yellowfeather - I would ove some recipes esp chicken pie! DH will eat that (may try to pick out the brocoli though )

i shudder at the thought of swede...but most veg go down well with my family. and if in doubt i just slice stuff v thinly and bake with double cream...mmmm
I really look forward to getting our box on Fridays and pondering what to make.

bettroot nice boiled skinned and served with sweet and sour sauce or boil skin and put in vinegar for use with salads etc
jerusalem artichoke
I am veg hound and I loathe them
Ask your suppier to not send you thing you don't like
I ban kale (adore every other cabbage/leaf though ) celery, celeriac, artichokes and kohlrabi.
You do need to get 3-4 boxes to get used to ad libbing your dinners a bit
Worst case bung it all into a soup, rarely fails

I have a lovely recipe for roast beetroot. Roast beetroot whole (peeled) for about an hour and a half at 180 with a couple of tablespoons of water and cover with foil. Then when cooked, take out of the oven, put a tablespoon of marmalade and lots of butter, toss it all around and put back in oven for 5 minutes uncovered.
season and sprinkle some chopped flat leaf parsley on it
Thats actually a riverford recipe, have a look at the website. They have lots of recipes for beetroot as they tend to be quite fond of it. Initially my dh wasn't keen, but is a complete convert to beetroot now

I alawys end up with Jerusalem Artichpkes left in the box - they make you trump by the way!! Or beetroot, we never eat it. It's worth persevering. As spring approaches you'll get a better selection. You should get some Purple sprouting soon which is delicious.

my kids are always convinced it is chopped spinach, which bizarrely they mind less

Swede is lovely baked - chop it up into 1" cubes, add any other root veg, toss in olive oil and rosemary and bake for 45mins-ish at 180/200C.

I usually pass on beetroot to mil or dad when I get it in my box, but after seeing this will try some grated raw. Memories of horrible limp purple wet salad as a child have put me off! Typically now I'm inspired there's none in my box - I have potatoes, carrots, cabbage, parsnips, leeks, garlic, a variety of salad leaves and a couple of squashes this week. Usually soup or stirfry anything I don't know what to do with!
I do think you should swap suppliers if you aren't getting any staples. Mine's great but from a CSA farm across the field so no good to you I'm afraid.

Cooked beetroot makes a great salad with chopped apple and a yoghurt dressing. The apple goes pink too. Beetroot is actually quite sweet and both my kids love it. I has been a staple since they were 1.
Broccoli hating DS will eat brocoli soup with cheddar cheese and cream melted in just before serving.

Look on the Riverford site recipe bank it's great and most recipes really work. J artichokes are lovely with bacon(Riverford recipe). PSB is absolutely gorgeous there are some lovely recipes on Riverford. Very jealous as doesn't seem to be any PSB heading our way in our Riverford box-haven't had it for ages. Beetroot is lovely in cheese sandwiches with salad cream and roasted. We get the med box and the fruit box which seem to work really well as you get loads of staples.

Ok
Chicken Pie

Basically you'll some short crust pastry, either make it yourself or just buy ready made.
Line your dish at the bottom ready for the filling.

You'll need about 3 chicken breasts depending on how big you want your pie and how many your feeding.
Cut into pieces and fry with onions. Leave to one side when cooked.
For the filling sauce you'll need the following;
3/4 pint of veg stock
1oz/25g butter
1oz/25g flour
2floz/60ml cream (optional but very tasty with!)
salt and pepper to taste.

Melt your butter, then beat in the flour and cook on a low heat for 2 mins.
Remove from the heat after 2 mins and cool before adding the veg stock, a little at a time.
Bring back to the boil and stir until thick. Turn down the heat and simmer for 15 mins. Add the cream and bring back to simmer.

If you want, you can add mushrooms, garlic and tomato and basil because this is like a basic sauce. Just add them at the simmering stage.

When the sauce is ready pour it in with the chicken and throw in your brocoli and put straight into your pie dish. Then roll out your pie top and cook for about 30mins ish.

Tomato Sauce
3 tbsp oil
3 small onions, peeled and chopped
2 red peppers, chopped
3 courgettes, grated
3 carrots, grated
3 stalks of celery, chopped
1 large pinch of dried oregano
6 x 400g tins of chopped toms
2-3 garlic cloves

Heat enough oil to cover the bottom of a deep pan.
Fry the onion, celery, pepper, courgette, carrot and garlic for 5-10 mins. Add the Oregano and the tomatoes, then season.
Simmer for about 30 mins. Liquidise and when cool, freeze extra sauce.

I love this sauce because it has so much veg in so great for disguising if your kids dont like them and you can use it for loads and loads of dishes.
I use it for spag bol, pizzas, just poured over pasta for really easy dinner, lasagne, pancakes. You name it, you can use it!

With my DH I have to hide new ingredients i.e grate them into sauces/boil down into stews etc and not tell him the contents. Then when he comments 'meat and potato pie was lovely' I casually mention that it contained celery and swede.

I overheard him telling friends at the weekend that he loves squash - one of the things that he claimed to hate when we moved in together!

Basically if their mum didn't make it for them they don't like it when in reality they haven't a clue!

Persevere with your DH - he'll get it eventually. Plus it's really good for DC to see parents enjoying variety of different foods.

I do this quite a lot, but it's difficult to disguise broccoli and red peppers!

Also he knows I am getting this stuff now so will be on 'high-alert' for mysterious looking bodies in his food.

I could scream at his mum for doing this to him.

She made me a 'roast' once.

Boil in the bag chicken in gravy
new potates
over boiled cauliflower
tinned processed peas (my DH each garden peas it's his brother that eats the procesed variety)

lol at your mil's dinner. My sister's boyfriends family eat roast dinner about 4 -5 times a week, and, its all Aunt bessie roasts, overcooked meat, and frozen cubed assorted veg.
My sister thought it was funny when his Mother said to her boyfriend, "Doesn't C like vegetables" She just can't bring herself to eat them, after having the real thing at home

The box arrived with lots of info, including a laminate that declares the fruit and veg box will never contain carrots, potatoes or onions ! This was not explained on the website - although the large box which also will never contain spuds is highlighted as such.

Anyway made a brocoli soup for my dinner - promised DH I would not ask him to try brocoli, kale or mushrooms.

But he showed an interest in the beetroot and artichoke so he is willing to give them a go! He also loved the apples we got.

I also ordered a seperate bag of blood oranges and was transported back to my childhood immediatley - I have not had such a delish orange in over a decade!

We get riverford boxes (Are these the same as yours?) we do get odd things eg beetroot and parsnips which we all hate.

But for example artichoke, I don't know if you have the spikey one or the one that looks kinda like ginger? If its the ginger one, it's fab on pizza, we did it last week.

THe fruit and veg mix box never has a good supply. We get the medium and appart from ALWAYs having carrots it's pretty good.
