Student 'snack kitchen' - a week to train DS...ideas please

My Ds is off to uni next weekend. His main meal of the day is provided but I am looking for ideas for breakfasts and lunches. In reality I expect it will be toast, sandwiches, beans etc but all of a sudden he has shown an interest in trying some more things so I am hoping for ideas. He has a 'snack' kitchen only so hob, microwave, toaster, kettle but no oven. He doesn't eat fish so tuna pasta etc is out and he's not keen on much veg but hoping that might improve if he is hungry! Thanks.

Be careful. My dd wasn't allowed a mini fridge in her room (halls accommodation) and the cleaning staff made spot checks (to check up on cleanliness) so she couldn't sneak one in even if she had wanted to.

I bought a small Swan slow cooker from the Range it is great. I was lucky as I paid £7.50.
Tilda rice is good and you can add bits of meat and veg.
Corned beef hash, stewed apples, stir fry, fajitas, pancakes, omelettes, frittata.

For those that like tuna. Campbell's condensed mushroom soup, tuna mixed together can add pasta or put on a bed of rice.
Breast of chicken with it poured over like a sauce with some sliced fried mushrooms through.
Look out for bargains in greengrocers on a Saturday. Where my daughter used to live they kept second best under a bench for uni students and pensioners and sold lots off cheaply on Saturday afternoon because it would be old by Monday.

Heinz have recently brought out a new range called creationz. It includes L Curry Lentils, Tagine chickpeas, Veg Chilli Beans and Mexican beans. They're really good and would be easy to just microwave with a pouch of rice or serve with cous cous or nachos.
Also remember potato waffles can be cooked in the toaster!
Don't students just get take always on Saturday nights anyway?

He has everything there except an oven and grill! He will have to ring out for pizza and come home for a roast (Yay!) but surely everything else is doable?

A non-stick wok can be used to substitute for every other pan. As long as it has a lid it can be used for stir-fry, stew, as a frying pan even as a deep fat fryer .

Fish fingers can be cooked in a toaster too, in a toaster bag.

This Morphy Richards multi cooker will be going to university with DS. It replaces all the pans he'll need and at a pinch could be used in his room.
I bought it for myself but went back to my usual gear...

You can get toaster bags in pound shops!
You can also cook potato waffles in a toaster too I have been told.

Ds in same situation. Any recommendations for simple micro meal recipes? Found a Meals in a Mug cookbook in the Works but not sure how practical it will be to buy such small quantities of meat/fish.

A pack of toaster bags.

pasta sauces, cream and tomato

  1. chop a couple of mushrooms and fry in oil, add a dollop of cream cheese

  2. chop a few veg and fry (can also fry meat) then add passatta

Meatballs to go with the second saurce - get a packet of sausages, cut the skin and take half the sausage meat, roll in to a ball and add to the second sauce, continue until you have enough meatballs - simmer for 15 mins and serve with grated cheese on top.

If he wants to make something more substantial you can make a modern version of a hay box with a cool box and some insulation.

toastie machines are great - tell him to keep it in his room, then he will know it is clean, he will always be able to use it not have to wait for other people to be finished etc. I used mine loads as a student. or the toastie bags are good too but again tell him to keep them in his room or they will walk.... toasties can provide breakfast, lunch or late night snacks too so multitasking. unless of course he doesn't like toast. get him a stash of those little microwave snack pots too - all the supermarkets do them, past, stew or curry type ones, easy to do, not going to fill you up greatly but for an evening snack very useful. i used to eat soup and croutons a lot too but possibly not very trendy for a young lad.

How about microwaveable rice packets. You can get whole grains as well as your basic Uncle Ben's. Also look out for microwave cooking utensils, you can get them for bacon, to cook poached or boiled eggs, porridge.

sliced sweet potato can be cooked in a regular toaster. was a little al dente when i tried it but fine nonetheless

Got a Breville deep fill toastie today...loving the thread with ideas such as pancakes etc.that can be cooked in it. Did a huge shop at Asda and Argos today so it's all seeming a bit real now!
