ok

I have home made chicken stock in the fridge and some left over chicken.

Also have swede, leeks, carrots, celery and soup mix.

How do I put them all together?!

Bung it all in a pot on a low heat. Add the chicken near the end. Season to taste

got an onion as well?

chop veg up
soften leeks and onion if you have got one
add rest of veg
sweat in pan with lid on till slightly softened
add any herbs you may happen to have - bayleaf, rosemary, thyme
add chicken stock
bring to boil v briefly then simmer until veg soft

then you can either have it as clear soup with bits in
or whizz up 1/2 of it in blender, return to pan and add a glug of cream and maybe some grated nutmeg

soup mix??

What is this?

I would fry the chop the leeks and celery quite small, fry them for 5 or 10 mins til soft. Dice the swede and carrots and add them for a couple of mins, then add the chicken stock, some herbs and a chicken stock cube if your stock is not very chickeny. Cook for a bit and lob in the chicken and some peas if you have in teh freezer, add tabasco or similar to taste

soup mix has lentils and other things in. Bought from health food shop thought it looked healthy!

oh I see, it is mixed pulses?

Ok well rinse them and add at the frying stage, then cook the whole for an hour or until the pulses are soft then carry on from there

I disagree the pulses should thicken it enough (am not a big fan of potato in soup makes it sludgy and starchty imo)

CountessDracula · 02/02/2007 15:16

starchy even
