Nice, easy and inexpensive recipe for Veggie dinner guests PLEASE

Have got our veggie friends coming round for dinner this weekend and I have no idea what to cook them. Any ideas? (I'm not keen on pulses so no pulse recipes please!) The last time them came round I cooked them a lovely salmon and cream pasta but DH says I can't do this again as he doesn't like it! Many TIA

so they aren't veggies if they eat fish, which is easier for you

and the words Fish and Cakes springing to mind, in fact Thai fish cakes and a fried noodle dish

There is a very nice Italian aubergine dish that you can do with a salad. You just slice and soak aubergines then brush with oil and grill. Pour some passata (I use one flavoured with onion and garlic) into the bottom of the dish. Then a layer of aubergine, layer of fresh mozzarella cheese, layer of passata, repeat until dish is full and finish with layer of passata and parmesan on top. Bake for about 40 minutes at 180°C.

My meat eating friends love it too...

thanks mumpbump - I'm sure it is delish - only thing is aubugine makes me want to gag (sorry!). ANy other top veggie dishes anyone.

What about kedgeree (I have a fantastic recipie for one which uses salmon and smoked salmon)? Or a mushroom/vegetable risotto maybe?

okay, olive's vege lasagne:

roast peppers, courgettes and red onions for 40 mins in 200 degree oven (2 pep, 2 courgettes, 2 onions or so)

put third of tin of toms in lasagne tray then (fresh) lasagne layer then half roast veg half pack of crumbled feta, handful of torn basil

repeat

last third tin of toms, then lasagne, then tub of creme fraiche splodged over top sprinkle with parmesan cheese and put in oven for about 30 mins or so

add parma ham to roast veg if you want a change

Risotto's? Easy peasy but lovely

You could do mushroom, or asparagus, or pea, or lemon or anything really!

YOu just need risotto rice, chosen veg, veg stock and parmesan cheese, possibly a little knob of butter at the end too

Or I adore roasted vegetables served on a mountain of couscous.

Or ceasar salad, perhaps with some grilled fresh sardines.

Or Tomato and goats cheese tart, served with a nice salad.

Or that greek pie, with spinach and ricotta filling made with filo pastry.

Or a yummy vegetarian curry. I like sweet potato or squash, and then i usually do a lentil dahl to go with it. Cauliflower curry is yummy too.

Or what about a Thai fish curry?

Thai fish cakes a la Suzy would be divine too! Or look for Gary Rhodes 3 way fish cakes in a lemon butter sauce recipe - divine!

You can also make fish balls (instead of meat balls) in a tomato sauce served with pasta.

Thai style fish cakes serves 4 as a starter

make them in advance, keep them covered in clingfilm in the fridge and then fry them in a hot wok, in 1 inch of vegetable oil, four at a time.

1 can of tuna , at least 200g in weight
3 tablespoons of 1000 island dressing
6 slices of white bread made in to crumbs ( rip in in to pieces and put it in the blender)
1 egg
a small amount of chilli - this could be in the form of a finely chopped chilli, some hot sauce like tabasco - it's really up to you how you deliver the heat
2 spring onions including the green bits very finely chopped
2 teaspoon sof Thai Fish sauce
a squeeze of lime juice
1 bunch of coriander finely chopped with some reserved to garnish

Sweet chilli sauce to serve

Mix it all together in a big bowl, use your hands - it's the best way. Then chill it in the fridge for half an hour. Then with wet hands shape in to balls a little larger than a ping pong ball and flatten slightly and arrange on a plate. Cover with cling film and taket them out of the fridge while you are heating the oil in which to fry them.

Arrange on a platter with a shallow bowl of sauce for each guest and garnish with corriander and finely sliced cucumber.

I 'm sure you have a type of noodle stir fry that you like for the main course, you could add some firm tofu, Cauldron do a nice marinated one, some sliced canned baby corn and some crushed peanuts in amongst the other veg. The ready made sauces you can buy are good and provide all your seasonings for the dish.

A salad of sliced red onions and cherry tomatoes would go well.

Get some good fruit sorbet for dessert, like mango.

How about a mushroom and stilton bake type thing with crusty bread - makes a great starter!
