Would you use minced beef with yesterday's "use by" date?

NO - many types of food bacteria have no scent but can sure do lots of damage - had food poisoning in the past - not worth it for the sake of a pack of mince.

yes, it would smell. Most GOOD shops usually have a one-day grace built into their sell-by's.

Also, with mince you have to cook it for so long, it would kill anything that was starting to grow.

i would use it...my dh always says 'the mince doesn't know that it's supposed to go off on the date' shops always err on the side of caution so you have a few days after expiration anyways

Thanks. Well, I smelt it and it smelt fine and hadn't gone that horrible dark brown colour like mince does sometimes, it was still red. So I cooked it yesterday and made it into a lasagne to reheat tomorrow night. Just thinking now whether that was a good thing or not . Don't suppose it matters though now it's been cooked?

nah, is fine once cooked. Don't reheat the lasagne more than once though - if you won't eat it all tomorrow may be best to freeze half now.

Yup. Wouldn't use a week after the date without a good sniff but sell-by dates are very conservative and it should be fine if you cook it thoroughly (and keep, as I presume you do, reasonable standards of hygiene in your kitchen like not letting the cat shit on the cooker...)
