Anyone got a breadmaker? Tips & recipes please...

With our nearest shops well over a mile away and baby No.2 due in a couple of months, I got sick of eating 'several day old bread', or worse, the cardboard stuff available from Petrol Stations, and have recently succumbed to the thought of smelling fresh bread wafting from the kitchen - and have bought a breadmaker.
First attempts all good so far... scrumptious crusty white for breakfast this morning!
Anyone else got one, and have any tips/hints/suggestions e.g. where can you get BIG bags of the right flour? - our local Safeway only seems to stick the 1kg size which only makes 2 loaves!

Will look out for those as well, thanks miggy, hadn't thought of doing that to check the machine was OK.

I think the mixes are difficult to use in a small breadmaker. You can't use a full pack so you have to try to apportion the mix and the water to get the correct amounts. I generally get good results from using plain ingredients and the Morphy Richards recipes are so easy to 'weigh out' using the scoops provided that it really isn't any hardship.

Thanks, Miggy. Have ordered the bargain-price Panasonic. Well let you all know how I get on with it!

Dumb question maybe but are you guys saying that the reason I don't like the bread my bread maker makes is because of the yeast I'm using. I find my loaves are just too dense. I want them light and fluffy but it just doesn't seem to happen and I follow the recipe.

I changed from the suggested flour to normal plain flour which seems to give it a slightly ligher texture but I still find it so dense and heavy and overpowering in terms of filling.

I haven't made dough in mine yet but now that someone mentioned it makes good hot cross buns I'm going to give it a go.

Are you also suggesting I mix the bread in the breadmaker then put it in the oven to rise?

I find I get a much beter result if I just use the machine for mixing and a first rise, then knock it back, put it in a tin, let it rise again and then bake it in a hot oven. It's more of a nuisance, bur makes much better bread.

Yum yum -- just got our Panasonic and made some lovely banana bread in it!

Now here are my questions:

  1. the guide says to use vitamin C in wholemeal recipes. Can we just use a little orange juice instead? Has anybody tried that? I would make sure to get the total liquid levels right. I thought that the OJ would also provide the sugar the recipes seem to all ask for, too.

  2. The recipe book says not to use the Allinson's type yeast, because it needs "reactivating". But couldn't I just "activate" it, add and let breadmaker do all the usual rest (kneading, proving & baking, I mean)?

I've got a Panasonic breadmaker which is a couple of years old but still works perfectly. This morning I made some gooseberry jam in the old fashioned way. I wanted to try making it in the breadmaker but I can't find the instruction book.

Does anyone know if I just put the ingredients in the breadmaker pan and press the 'jam' button and - hey presto!

Would appreciate help from anyone who knows.

My other problem is that I haven't been able to remove the paddle for ages. That means I get it stuck in the middle of the loaf I'm cooking. Any bright ideas on that too please.

What a dumbo I am!!!!!
