I made cassis with mine this year, we always have a glut and I struggle to use them all.
We do not eat much jam but my parents love blackcurrant jam, however I have messed up this year - it has not set, no idea what I did, but we have lots of lovely compote, perfect for ice cream, pancakes, porridge, so not a total loss.
Last year I just made "Ribena" with them.

Jam.
Equal amounts of sugar and blackcurrants in pan, bring to boil until thick.
Just ordinary sugar, blackcurrants naturally have pectin.

I make some every year, you won't regret it!

No special jam equipment needed - just a big pan to boil it all up in.
Have you old jam jars with lids in good quality? If so, no wax seals needed.

To sterilise, re wash clean jam jars and lids, then put them wet into a lot oven, and bottle when the jam, lids and glass are hot. Or run clean jars through dishwasher and bottle when all hot.

They freeze well. Just wash and destalk them and spread them on trays to freeze loose before bagging them up. Then you can use them throughout the year.

Blackcurrant Flapjack is a favourite in this house. 7oz butter, 5oz brown sugar and 2 tbsp golden syrup melted together and mixed with 12oz porridge oats and 4oz blackcurrants, then pressed into a lined baking tray and cooked for 20 mins at 180. Delish.

I just pour a freshly boiled kettle into old jam jars and lids. Empty and fill with jam. Been doing that for years.

Am ready to be flamed for not doing it properly!

Muffins! My family grew blackcurrants commercially for years. My Mum always made jam, concentrate for juice, and muffins with the boxes we kept for ourselves.

As PP said, they do freeze very well.

I've got 4 bushes in my garden so I'm looking forward to next year's harvest. They were a bit too young to produce much this year but I got a nice batch of muffins out of them.
