I melt 25 g of butter in a large pot. Chop up 1 onion and 2 leeks, cook over a medium heat with the lid on for about 10 minutes, stirring now and then. Make up about 1.2 liters of chicken stock (like the taste better). Thinly slice about 500 g potatoes. Add potatoes, stock, some pepper, a bit of nutmeg. Bring to the boil, turn down the heat, cover, cook for about 15 minutes till the vegetables are soft. Blend. Warm up again. Take off the heat. Add about 3 tbsps cream and a tsp of lemon juice

Sounds like the exact ingredients I used for my first batch, came out fine I didn't add milk and will add some cream or milk when reheating as I freeze it.

I fryed of the leeks and carrots first in a bit of olive oil and butter added potatos and stired it some more, lots of pepper, poured in stock and simmered until potato soft, stir in cream to serve.
