I have been given a humongous amount of courgette. what do I do. help!

friend has far too many growing in her a allotment and gave me 2 big bags today.

I am not usually a big fan of it so hardly ever buy it. no idea what to do with it.

any ideas?

I always add courgette to bolognese, chilli and pasta sauces. However, the best ever use if courgettes is Nigella's "happiness soup" - Google it - it's one if the most delicious things in the world (and doesn't matter if you don't use yellow ones!) 😀

Do they still have the flowers on? If so you can slice the courgette and fry very slowly with some garlic, salt and pepper until soft then add double cream and reduce. You then fill the flower with the mixture, dip it in batter and deep fry it- it's a Hugh Fearnley Whittingstall recipe I think. Obviously it's a treat because you don't usually get the flowers and, well it's really unhealthy!

I'm completely jealous, the bastard slugs ate 3 of my 4 courgette plants a month ago and the 4th ain't looking great!

I can't abide courgetti. I require my spaghetti to be made of pasta.

But I love courgette fritters. Grate your courgettes into a big pile onto a large cloth (teatowel, muslin) sprinkle on a tsp of salt and mix it through a bit then leave for 25 mins. Then gather up the cloth and squeeze out as much water as possible (you should end up with half the volume you started with as courgettes have lots of water in). Put in a bowl and mix in enough SR flour that the courgette gratings separate out from one another. Mix in crumbled feta and chopped fresh mint and enough beaten egg to make it all stick together. Fry in thin patties till crispy. Allow to cool before eating, they are nicer at "warm" than piping hot.

NB anything you can't use up will freeze fine.

There are loads of interesting Zoats recipes (courgettes and porridge, yes I am weird).

I'm having apple and strawberry zoats for breakfast tomorrow and I'm thinking of trying Mexican chocolate zoats (courgette, porridge, chocolate, yoghurt, chilli).

I eat courgettes every day. In fact, I've eaten them at every meal today. Might change my name to Zucchinistiffstink.

I'm trying John Torodes courgette lasagne tonight. Kids are not enthused but it might be delicious. Will report back

Courgette Fritatta is excellent. And courgette is one of the flavourless vegetables that you can add to fruit smoothies to increase nutrition and not impact the taste!

I love them in stir fries.
Roasted is great just as a side dish or in veggie lasagne.

I shove them in to most soups and blend into things like Bolognese. My kids like slicing them and eating raw.
