Help! Need a fabulous gluten free birthday cake recipe

I've just been asked to make a gluten free cake for a relatives birthday this weekend. I have no idea where to start looking. Can anyone recommend any websites with decent recipes? It doesn't have to be a traditional sponge like creation. Thank you!

What about this? You'll have to save the pic to read the recipe properly but it's a Thai rice cake.

I always just substitute the gf flour for regular. Nobody would known the difference. I just made this one for my dad's birthday...

This is my favourite cake ever - I just use Doves Farm plain flour in it and it is moist and lovely

Doves farm has a recipe section on their website - use the gluten free Madeira cake/loaf recipe, it's amazing!

I've always made it dairy free and nut free too (other home allergies, plus school policy) and it works just fine. It makes a seriously nice cake, and most people haven't been able to tell it was gluten/dairy free.

It's also quite a firm cake, which is handy as usually gluten free cakes are a bugger to shape/ice/decorate as they crumble so easily.

Nigella's chocolate olive oil cake is amazing. It has a tendency to sink in the middle (like lots of other flourless cakes) so pile it high with raspberries to pretty it up. I eat gluten and make it regularly as it's amazing.

You need to do a cake without butter - a simple flour, sugar and egg sponge - here's one recipe
These cakes are actually better gluten free as the lower protein (gluten) flours work better. You need to use an electric whisk (pretty much impossible to do by hand, as I've found out) and whisk for a loooong time - until the egg and sugar mix is at least 3 times the size it was to begin with.

For fillings do something very light - fresh fruit and cream (mix the cream with quark or cream cheese to make it more solid) is a good one.

Another option, my particular favourite, is Princess cake

Oh and definitely drizzle some juice on the sponge and let it soak in before putting the fillings and toppings and whatnot on. I find gluten free cakes made this way to be a thousands times more delicious than normal cakes - so light and tasty Grin

I make Delia smith black forest roll.

Even if you just use the recipe for the flourless sponge it is divine - make two square and sandwich together with cream and cherry jam and it taste wonderful

I just use Dove Farm gluten free flour, too. My chocolate cake recipe I use sunflower oil, and put a tablespoon of treacle in it too - makes it lovely and rich.

In case it wasn't obvious, just substitute any gluten free flour mix for the normal flour in those recipes. You can also swap a 3rd for potato flour.

Thanks so much for taking time to reply - the links I clicked on look amazing (especially the choc and raspberry layer cake nom nom).

Just put the children to bed and now sorting dinner so will sit down and take a proper look/read later (& before I do the online Tesco shop). Will let you know what I go for and I'll keep the other recipes for future birthdays!

This is a favourite cake that is naturally GF and dairy free. I change the fruit toppings and sometimes use frozen raspberries warmed up with a little icing sugar to sweeten and cornflour to thicken as a topping instead of the pomegranate:

Or as Millionsofpeaches has already said, I just substitute GF flour (I use doves farm self raising that has xantham gum in it) and make sure there are enough eggs (minimum 2 per cake) to help bind and make the cake rise. This is a very simple chocolate cake that always turns out well especially if you cover it in chocolate ganache:

I would line the cake tin with baking parchment or silicone liner. The quick release spray stuff (that they sell in Lakeland) contains gluten so avoid. Also be aware that cake sprinkles like hundreds and thousands sometimes contain gluten (in case you're making a kid friendly cake).
