Tasty and simple BROCOLLI SOUP - anyone got a good low fat recipe?

do you specifically want brocolli soup? I mean it is not a vegetable that naturally lends itself to soup unless there is a creamier flavour accompanying it. In fact the worst recipe I ever tried in my life was low fat lemon and brocolli soup. Maybe I'm still traumatised but might I suggest using other green vegetables such as savoy cabbage or spinach with low fat yogurt to add creaminess and plenty of aromatics such as fresh herbs added to a base of sweated onions, carrots and celery with a good stock base such as Marigold Bouillon?

I made broccoli and stilton soup this week. It was utterly vile. The broccoli turned into little green dots and the whole thing resembled vomit, flecked with green dots. It tasted like soap. You might lose weight eating it, but only because it's inedible.

Not true!! I make brocolli soup with brocolli (natch), sweated onions and potato and Marigold Veg stock. Add some milk or cream and pepper twds the end and blitz. Even my kids love it. So there

Ooh, now thats hard because I'm quite vague with amounts etc when it comes to soups. I usually use an average sized head of brocolli, one medium onion, a couple of medium potatoes and about a pint of stock as I add milk or cream twds the end. With no cream I would add maybe a litre of stock (Marigold Swiss veg stock is nice). I just blitz and if too thick, add more liquid and gently re-heat.

Honestly, my kids and quite a few of their veggie phobic friends like it. HTH and sorry about lack of precision

i make it how oxocube makes it, and don;t even add milk or cream...started a thread about this a while ago , as my soup was too thin, chucked in a couple of parmesan rinds and it thickened nicely ! delish !

i wouldn;t recommend it. the problem with mine being too thin, it was too little potato..without the starchiness, it is just broccoli and water, fat free, but might as well drink green water!

the potatoes thicken it as Lulu says. Too thin otherwise. You could try to thicken with another root veg I suppose but its still carbs at the end of the day. But a superfood and anti-oxidant nevertheless. Just eat less of it and go for a walk afterwards

Chef Gordon Ramsay shares his recipe for broccoli soup -- intensely flavorful with only a few ingredients!

Ingredients

to taste Water
to taste Salt
to taste Black pepper
2 heads Broccoli very fresh
to taste Olive oil optional, for garnish

Instructions
Cut the florets off the heads of broccoli. Cut the stems into similarly sized pieces. Add all of the broccoli florets and stems into a pot of rapidly-boiling, salted water (2 tablespoons salt in 5 quarts of water). Cover. Cook 3.5 to 4 minutes.

Using a slotted spoon, put the cooked broccoli pieces into a blender. Fill blender about halfway with cooking liquid. Blend carefully since it's hot. Add more cooking liquid as necessary to achieve the desired consistency. Check seasonings.

If desired, add cheese (goat cheese or cheddar cheese) to the bottom of the bowl before pouring the soup in. Serve, drizzled with olive oil if desired.

I thought Gordon Ramsey had made a soup with just brocolli and nothing else! Just couldnt be sure as it didn't seem possible! Will give it a try! Many thanks

How about adding swede instead of potato to thicken the soup? That's what I do when I want to make a no point (weightwatchers) vegetable soup.

i thought that ramsay recipe on his tv show was for watercress soup not broccoli? His punters weren't too keen I seem to remember!

I like a broccoli soup but think it does need a stock in it and potato for thickness and onions/garlic, otherwise it's a bit too 1-dimensional.

Brocolli soup is delicious with a little goats cheese stirred in till it melts. Makes it creamy and goats cheese is pretty healthy. Health kick doesn´t equate to no calorie diet to me.

my dh made me the broccoli soup a la ramsey - water, brocolli and salt - its completely delicious and so tasty i was really surprised...
