chunky veg soup recipes please

does anyone have a chunky veg soup recipe that they know is tasty as the ones i make seem slightly bland but i need to lose some weight so want to make a big batch.

i like most vegetables and usually use tins of tomatoes in it too along usually with potatoes, carrots, celery, swede or parsnips, sweetcorn, cabbage etc.

i do a carrott, potatoe, onion soup...... with lots of coriander. Cook in a veg stock then when all veg have "mushed" down, blend with a hand blender to make it really thick. If NOT on a diet I also dollop a spoonful of cream in...but guess you won't be doing that !!!!!

that sounds nice but i wanted some chunky recipes as i find blended soup a bit boring and i need the textures of the food to make me feel like im "eating food" iyswim

For chunky soups i like any that are italian bean type ones. Good and hearty. Healthy too.

this probably sounds silly but what are they like? do i buy them dry or in tins etc at my stupidity

I just use tinned. I think tinned pulses are fine.

Ermm, I lost my fave recipe though. It was beans, veg and rosemary based.

If i do find it, i'll post!

add lentils too, tinned beans - borlotti etc..
parsley chopped up good veg stock (i like kallo)
i like using broccoli, spinach, fennel and mix texture of veg, chop some grate some etc..
i dont blend really, dont have one

i love soup!

hadnt thought of grating. what a fab idea. forgot to say about brocolli and cauliflower as i love them too.

Provencal Pistou soup

saute onion, 1 garlic clove, 1 leek, 2 sticks celery, 8 oz carrots 10 - 15 min (could saute in tbsp water not oil to reduce fat)

add 1 tin chickpeas, 2 pts stock, simmer 20 mins

add tin tims, 1 courgette simmer 5 min

add 2-4 oz pasta, cook 10 mins.

stir in 4 tbs pesto

very tasty, and pasta makes it filling- quite low fat, could omit pesto for v low fat, but pesto adds great taste.

glad you like the look - we had it last night, I made double and there are 6 individual portions of it in my freezer! It is a recipe from our school recipe book - my kids eat it as their music teacher supplied it!

I'm going to add this soup - it's called Fat Burning Soup - is very easy and apparently is BURNS FAT the more you eat because the veg are negative calories (and yes, I have lost weight with this soup before)! You can't ask for more than that!
Wash all the veg but don't peel them (you burn more cals that way) And chop veg finely so they will cook more evenly.
to make 900ml - 1.2litres...

2 bunches of spring onions or 1 large leek
1 medium or 1/2 large cauliflower divided into florets (include green leaves) or 2 med heads of brocolli
125g spinach
1 large red.green or yellow pepper
6-8 celery sticks
2-3 large carrots
1-2 teapsoons of cruched cumin and coriander seeds (opt)
1 pint of chicken stock (easier to use cubes!)
400g can of tomatoes
handful of chopped parsley
2 garlic cloves crushed
1/4 teaspoon cayenne pepper (opt)
Stick it all in a pan bring to boil then simmer for 20 - 30 mins.
Enjoy!

and cumin is just such a wonderful aromatic spice to use. Love crushing it and preparing it.

Hi everyone. Have been lurking a bit recently & LOVE mumsnet!
I have been asked by school if I could put together a recipe book as I made calendars at chritmas & they sold really well.Any ideas on this would be gratefully received,do you use all recipes donated? do you try them first? how big A3?How much to charge??
