Recipes for lemons (I have a LOT of lemons!)

So the lemons in my garden are now all ripe but there are loads of them! I need inspiration for lemon recipes. So far I've made a load of lemon curd and citrus loaf and we've just made some lemonade. Any more ideas? Maybe some savoury ideas too? Internet has a lot but seems to be same sort of thing and I prefer recommendations Smile

Does anybody know how long lemon curd keeps for or whether you could freeze it? I may make a vat load if it'll keep for a while. Can you freeze lemons or recipes that you could freeze? I'm hoping the lemons will last on the tree a while but I have zero knowledge of gardening (goes off to Google...)

Lemon, or lemon & orange sorbet, very refreshing on a hot day, and quick and easy to make.

I agree that homemade lemon curd doesn't keep as well as homemade jam, it only has a short shelf life, so make in small batches.
Swirl lemon curd though vanilla ice cream for a delicious but easy pudding.

I used to make a sponge pudding with a lemon sauce on the bottom, it was all made as one mixture and separated out during cooking, it was called Lemon Surprise Pudding or something similar, worth a google Smile

Candy some of the peel. Only lasts about three months so don't go too bonkers. Freeze the juice from the same fruit, freeze in ice cube trays so it is portioned.

I'd be tempted to offer some to friends as well. We have a productive apple tree in our garden, it produces early season eaters that don't keep. I took loads into work last autumn, once people tasted them I got a few requests for a bag and then people swapped some of their excess produce as well.

Fajitas use up a couple of lemons once you make your own salsa and guacamole and marinate the chicken with some lemon juice and spices.

And surprised no-one has said make your own lemonade. Delicious and easy. Oh, friends made limoncello which was delicious and gave me the worst hangover I've had in years (we drank tons of the stuff) although that only uses the zest. I also assume that it's possible to freeze lemon zest to use in cooking later in the year but I've never done it myself.

My Mum use to make this lots, it's delicious. Cooked in a bain marie so the bottom half makes the sauce and the top half is a really light sponge. Also lemon meringue pie. Bliss.

Freeze the juice in an ice-cube tray, grate the rind and freeze in little twists of plastic - one twist per lemon, so you have the right amount for whatever a recipe calls for.

As many PP, freeze slices for G&T. They look a little odd after a few months, go slightly 'dried out', but perfectly OK once dropped into liquid.

Thank you all again! I am currently making the lemon curd, lemon marmalade and freezing slices. I'm going to buy a bigger jar later and have a go at the preserved lemons too. Savoury dishes start tomorrow! I'm also going to bag some up and deliver to neighbours later Smile

My house smells so lemony now!
