what can i make with porridge oats, except porridge?

DS refuses to eat cereal or porridge in the morning although when he was younger he used to love them all. DD and i have porridge oats with dried fruit in but he refuses to even try it and because I dislike it so (I onyl eat it because I know it's good for me althgough DS doesn't know that) I really can't blame him.

Is there something else perhaps I can make with porridge oats, like a cereal type bar but that's not full of sugar etc, that DS can have for his breakfast to give him the benefit of the oats?

3andnomore ... I love the sound of your biscuits but what would happen if I halved the sugar quantity? DS has just been diagnosed diabetic and I'm frantically searching for new recipes. What do you reckon?

mckenzie, Canola oil is Canadian for rapeseed oil. I normally just use sunflower oil or whatever. (I think you meant to ask me?)

Millie1, there's a banana cake recipe around that is sweetened with only bananas, and raisins. It's made with only wholemeal flour, too. If you search MN for Franny's banana cake recipe, you should find it.

(With all the American-style biscuits etc that I make, I reduce the GI by using half wholemeal flour and half white. Tastes fine.)

Millie, I think Dates, etc..are sweet anyway, so should probably be alright...or maybe using Fructose, which seems to be better for diabetics is an option, it's sweeter, too, so you would defiantely need less!
Ready, do you kow what I think would be lovely instead of dates... dried apricots

3andnomore, I've had not-very-good reports on the effect of fructose on diabetics, tbh. It is just a two-molecule sugar, not that much more complicated than normal sucrose. I think dried fruit, or maybe molasses, are better sweeteners for diabetics.

This thread has the muesli recipe. I tend to use flaked coconut rather than dessicated coconut, as flaked is just nicer.

Oh, and I add pumpkin seeds, and some sort of nut, because I love them, and vary the sort of dried fruit - last batch had dried cranberries, cherries, and wolfberries. I think.

(one other idea - oats mixed with a tiny bit of honey and a tiny bit of oil and toasted on trays in the oven makes a completely different, crunchy, muesli-type cereal that often succeeds where 'soggy' muesli fails)

The muesli I linked to is a crunchy/dry one, too - not the traditional bircher stuff. I make a double batch every two weeks, and have it for breakfast every day. I'm a big fan.

NCQ...been out of Nursing for far to long me thinks, lol...it used to be adviced for Diabetics, but I wasn't sure if it still was or not.
Molasses, is that similar to treacle (dark syrup)?

You could make cereal bars using butter and a bit of honey for sweetness. You can add sultanas/bit of dried apricon/nuts/seeds too.

3andnomore - I've just made those oat biscuits. I'm not sure there will be any left by tomorrow morning I halved the sugar and they are still delicious.

make bicuits- I think Phoebes fabulous oatmeal and raisin cookies use porridge oats...(shall ask friend who has the friends cookbook, cookies really are the absolute best).

Make a face pack??

Although not a breakfast food, I've used them in meatloaf and meatballs as a healthy alternative to breadcrumbs

Thanks 3andnomore and NCQ ... I shall definitely try the biscuits and just halve the sugar - already highly recommended by mckenzie. BTW, NCQ is correct, fructose isn't recommended but a sweetener such as canderal would be okay. Am just learning all about this!

oh dear, DS didn't like the biscuits! He took one and was quite excited to be eating a biscuit for breakfast. tried it and then tunred his nose up and said he didn't like it.
Bless him, I told him I'd got up early to make them and he apologised for not liking them and for me having wasted my time. Little did he know that after the school run I had three of them
