DIY chicken nuggets.

Anybody got a recipe or technique for making your own nuggets, I want to oven cook them not fry. Thanks.

You need Enid's recipe -
'Homemade Chicken Nuggets 750g minced chicken 175g breadcrumbs 175g grated cheddar 1 tbsp mayo to bind 1 clove garlic salt and pepper beaten egg and some fine toasted breadcrumbs to coat the nuggets Preheat oven to 180C. Mix all ingredients up to and including salt and pepper together. Form into whatever sized nuggets (its up to you, mine are sort of walnut sized) and roll them in beaten egg and then in toasted breadcrumbs. You can freeze them now if you want to. Place on greased baking sheet and cook for about 20 minutes (45 if frozen). Voila! Its money saving, honestly, the reason I don't buy much processed food is that we can't afford it. They don't take long to make and once they are done you can freeze them. They are delicious too!'

Mmm they sound good i hadn't thought of using chicken mince I was going to use chicken breast cut up, I supose I could use the same coating on chicken breast bits.

It was the coating I wasn't sure of, so just toasted bread crumbs ah.

i just make plain ones no fancy stuff as ds doesnt like them that way
cut cjicken up, roll in flour, dip in beaten egg then cover in breadcrumbs put on a slightly oiled tray and in the oven

Enid's are great except the quantities given would feed an army. I use about half of that and omit the garlic - it's a bit overpowering.

Wordsmith thanks for the tip on quantities, I will prob freeze some then, I am making a pot of soup ATM that is supposed to serve 4 but it would serve 8 easy.

Yep they're great frozen, you don't even need to defrost them before cooking.

I cook chicken with brown rice and some apple then blend it, coat nuggets in egg & breadcrumbs then freeze.

When you say breadcrumbs to coat - do you use the ones you can buy from shops or use proper bread. Whenever I have tried this the breadcrumbs go soggy?

two to tango - you can use shop breadcrums or I make them and then toast them lightly in a dry pan - only takes half a minute or so and stops them absorbing too much and going sloppy. Can do it whilst doing something else with just the odd stir - careful though, burns quick!

I make them using either chopped up chicken breast or those mini fillets cut into 2, coat them in egg and roll in bread crumbs, fresh or shop bought and cook for about 20 - 25 mins at 180. DH likes them as a treat (bless him!) and fish fingers work in the same way, but frozen fish is easier to coat because it's less likely to flake when you try and coat it in the crumbs.

Toasted breadcrumbs and chicken mince: do you have a food processor/liquidiser? If so, for chicken mince, put chicken fillet/breast whatever in and switch it on. it will mince the chicken.

Toasted breadcrumbs: put a piece of bread in the toaster. Toast it. Let it cool. Put it in the liquidiser. Turn it on. It will make toasted breadcrumbs. If you don't toast it first, it will make ordinary breadcrumbs.

yes since then I modify the amount of garlic, just use a scrap now

If you freeze them before cooking you can cook them from frozen - check them after 30 mins.

I haven't made these for ages! Agree Enid, I found (or rather dd) the amount of garlic too much so I actually left it out the second time I made them.

You also need to get yourself one of these ? or © for your recipe!

i used crushed cornflakes as a coating, pieces of chicken, bite size, dip in egg or milk, and dip in crushed cornflakes, bake in oven

the reason is i dont have a kitchen gadget for making breadcrumbs but the dd's really really like it

no I mince (or finely chop it) in the food processor. any butcher will mince chicken breasts for you.

it workds with minced turkey too (which you CAN buy ready minced in the supermarket)
