i have a 2 year old dd who has a severe milk and egg allergy and i am desperate to find a good substitute margarine that will make cakes and biscuits etc that taste like 'normal' and also a good egg substitute. also a white sauce recipe that the whole family could enjoy and any really good cake and biscuit recipies. many thanks in advance

Hi, I don't eat dairy and use Pure dairy free spread or Sainsbury's dairy free spread, both of which say on the carton that they're suitable for baking etc. I haven't tried Pure for baking apart from flapjacks which were delicious. You could try looking at Recipezaar and searching on dairy free recipes.

My dd is dairy allergic so we use Pure ( I prefer the sunflower variety to the soya one)- and I've often used it for cooking - it's absolutely fine for recipies which are ok with soft margarine ( eg most cakes)- but not great where block marg is called for - pura is better there ( tho taste wise not quite so nice IMO)

Try a Jewish Kosher cookbook like Claudia Roden. Because of the Jewish dietary laws forbidding mixing milk and meat foods, there are a lot of recipes for cakes etc that use oil instead of butter.

Also, have you tried a milk-substitute called Oatly? It's made from oats and IMO tastes lovely, much nicer than soya. I don't know whether it's a suitable milk-substitute for a toddler, in terms of nutrition, but it's excellent to cook with - and can be used to make a lovely creamy white sauce (well, slightly off-white, actually).

I have also been dealing with severe milk and egg allergy for the past 5 years. After trying a lot of different margarines my favourite is Sainsbury's dairy free spread which is a good all rounder. I've found it is best to avoid the soya margarines as these are the ones which tend to leave the aftertaste.

When I first tried to bake cakes for my daughter I went through a lot of different egg replacers with very mixed but normally disappointing results. I have now given up on them and try and use cake recipes which are vegan in origin - I find these give much better results. There are a couple of excellent cake recipes at www.veganfamily.co.uk - look on the recipe page link. I can highly recommend the banana muffins, which make excellent mini-muffins and freeze extremely well, together with the fantastic (very rich) chocolate cake. You will see that both of these use a combination of baking powder and vinegar (I usually use white vinegar) which produces a very good cake consistency.

For biscuits I use the following basic recipe - cream together 4oz margarine and 2oz castor sugar, stir in 5oz self raising flour. Roll into small balls, flatten and bake for 10-15 mins at 160C. To this basic recipe you can add various flavourings of your choice - 1tbsp chopped lemon peel for lemon biscuits, 1tsp vanilla extract and a handful of 'safe' chocolate chips for chocolate chip cookies or some glace cherries and almond extract for cherry and almond biscuits.

Other favourites in our house are a no-bake chocolate biscuit cake, west country apple cake, banana and date cake and rice krispie squares. I'm more than happy to post these recipes if you'd like them.

I have never been able to come up with an acceptable white sauce recipe!!

immyj, try making ANZAC biscuits, they don't contain egg and could probably be made with margarine. From what I gather they are considered the national biscuit of Australia. I found several recipes when I did a google search, and am still experimenting with the ingredients and quantities. Maybe one of the Austrailian mumsnetters will have a good recipe for them!

Lou I have bought mine at both Tesco and Coop in the past - they are both large stores - but I would ahave thought any big supermarket would have them????

No - actually you're right - the only one I've bought from tesco online is the soya one as that's all that comes up and I actually prefer the sunflower one - not sure why this happens as I have definitely bought the other one in store in the past - tho I suppose it is possible that they have discontinued it.

thanks very much for your message, i have visited the veganfamily site and have found quite a few recipies that i can try. it would be great it you could post the other recipies you mentioned as dd is going through a very fussy eating stage and so any ideas for something different would be great. its nice to know that there are other parents out there who are finding it difficult to find recipies for milk/egg allergy children. thank you to everyone who has posted.

have a 61/2 yr old with severe egg milk and nut allergy and another 4 yr old with egg allergy so have had plenty of opportunity to make inedible birthday cakes along the way!! However we have used this one alot as everyone else thought it was good too. it can be made in one tin ie for a birthday cake or divided into cup cakes, great for pinics etc it also freezes well.
10oz S.R flour
1/2 tsp salt
3tbsp cocoa powder
6 oz caster sugar
1tsp bicarb soda
1/2 pint sweetened soya milk
1/4 pint oil (i generally use a light veg oil)
3tbsp golden syrup
1/2 - 1 tsp vanilla essence

heat ovento 175c grease and line tin (if doing one lge cake).sift all dry ingredients into lge bowl. dissolve bicarb in 1 tbsp of milk add to bowl add all other wet ingredients. beat well . bake for aprox 40 mins.
tips..the vanilla masks the oil flavour so that is variable to taste. the cake often looks done externally but if you do a knife test is still v wet inside. turn oven down to abot 150 and leave for a bit longer, this has been a bit by trial and ovens vary so much!
i have also cut lge one in half and put jam in then chocolate icing on the top to make it really sickly!!! for butter icing i use Tomor. it is a kosher block margerine type.
well i hope this helps i know how frustrating it can be to be in the dark with these things good luck and let me know how it goes!

an after thought re white sauce , like coral i have found it hard but have you used tofu? if you melt this in to a roux it can work well enough for a lasagne fill in.

thank you for your birthday cake recipe, when dd was a year old i managed to buy a chocolate fudge 'allergy' cake, made by kinnerton and sold via sainsburys. by the time she was 2 this had been discontinued. i was so disappointed that she couldn't have a cake on her special day. at least this year she can have a cake that she can eat!!!

Immyj and Modaddy,

Here are the recipes as promised.

Chocolate Biscuit Cake (taken and adapted from "Sainsbury's Chocolate Cooking"

3oz margarine
2 Tbsps golden syrup
1 Tbsp soft brown sugar
1 Tbsp cocoa powder
8oz "safe" digestive biscuits, crushed
2oz raisins (optional)

Place the first 4 ingredients in a pan and heat gently until the margarine has melted (or alternatively cook in a bowl in the microwave on full power for 2 minutes, stirring once). Stir in the biscuit crumbs and raisins if using and press the mixure into a greased tin. Chill in the fridge until firm then cut into wedges.

Rice Krispie Squares (unknown origin - from my Mum!)

4oz margarine
half cup sugar
4oz chopped dates
3oz rice krispies
plain chocolate to cover

Melt margarine in pan. Stir in sugar and dates and cook for 5 minutes. Add rice krispies. Press the mixture into a greased tin and cool. Cover with melted chocolate and cut into squares when set.

West County Apple Cake (unknown origin - from my Gran!)

8oz self raising flour
8oz finely chopped or grated apple
4oz granulated sugar
4oz margarine
2oz currants
soya milk

Sieve flour into a bowl and rub in the margarine. Stir in the sugar, raisins and apple. Mix with a little soya milk to a fairly stiff dough. Grease and line the bottom of a flat baking tin (approx 10 x 20 cms) and spread the mixture evenly. Bake at 200c for 30 minutes. Dredge with brown sugar, cool and cut into slices.

Banana & Date Cake (taken from The Vegan Cookbook - Wakeman & Baskerville)

10 oz flour
1 tbs baking powder
6 oz chopped dates
3 ripe bananas (the riper the better!)
3 tsp vanilla essence
125ml soya milk
4 oz margarine

Sieve the flour and baking powder into a bowl and mix in the dates. Mash the bananas, vanilla essence and soya milk together until thoroughly combined and set aside. Melt the margarine, stir into the flour and then add the banana mixture. (A little extra soya milk may be necessary to get the right consistency) Pour into a greased and lined 2 pint loaf tin or 6 inch round cake tin and bake in the middle of a warm oven
(160c, gas mark 3) for approx 1 hour or a knife inserted in the centre comes out cleanly. Allow to cool before removing from the tin.

Whilst the subject of milk and egg avoidance is being discussed, does anyone have any good dessert recipes, ie the sort of thing suitable for when you have the family over for Sunday lunch. I seem to end up bringing out pastry based desserts all the time (fruit pies or crumbles, "bakewell" or chocolate tart etc) as I can't seem to find anything else which is tasty and different which we can all eat. Any good tried and tasted recipes out there?

immyj , i also thought my prayers had been answered with the kinnerton cake, shame it didnt last. there is obviously a growing number of the population who need/want these things for whatever reason, i'm sure there will be this type of product out again but in the meantime its back to the oven!!
Has anyone used silken tofu in cooking? i'm sure i remember it in some previous recipes but cant find them now(typical!!).

Hi, for baking you don't need an egg replacer as you can use either banana or apple (my yankee family told me about it). I'm more worried about my dd getting her calcium. She hates soya, but she may start agreeing to take calcium fortified oatly (oat milk). The hospital dietician told me it's fine to give to toddlers (she is one). Anyone got tasty tofu recipes (they said the hard tofu has lots of calcium in it).
