using "alternatives" in baking....

I remember seeing something somewhere (!) a while ago about healthier things that you can use in baking as alternatives to oil/marg/butter/sugar (?)/eggs(?) etc.....something like using stewed apple? not sure if I am making much sense but if anyone could direct me to somewhere where I could find some info then that would be great!!! Thanks )

It's apple sauce (which I assume is stewed apples) instead of fat and seems to be an American thing. Never tried it but I remember reading about it on US recipe sites.

There is also something called lighterbake, which comes in a jar like a jamjar. I searched high and low for it, and think I found it in Tesco's in the end.

I used the "Litebake" once I seem to remember. I think it's like pureed frit - dates? I can't remember the result - sorry - lot of use I am!

I don't think that you can make a straight swap. I have an american fat free baking book where they use concentrated apple or orange juice plus some strange additions in it. To be honest could never get hold of concentrated apple juice to be able to do the recipes.
