Easy cakes to bake in advance please

Anything without fresh cream or fruit should keep for a few days in Tupperware, fairy cakes?

Any sponge cake will freeze beautifully. I wouldn't try it with lemon drizzle cake though.

Or you could make flapjacks or cornflake crispies.

I freeze most of mine- we love cake, but could binge on them.! So I use my usual recipes, but bake them in 2 loaf tins. Eat one, and freeze one.
And I do freeze lemon drizzle, and light fruit cake. Gingerbread will stay fresh for days - almost gets better

Nigella's ginger cake is lovely and improves after a few days.

Lemon drizzle cake, ginger cake (is actually much better for being kept wrapped for a few days), there is also an amazing raspberry bakewell cake which is super easy and really delicious on BBC either food or good food website, I can't remember which.

How far in advance? If a day or two, just store in an airtight tin.
I used to make a clean-your-teeth chocolate cake for cub camp. Standard rich chocolate sponge cake with extra chocolate chunks and Maltesers thrown in. Sandwiched together with strawberry jam, chocolate spread and marshmallow spread. Covered in milk and white chocolate and scattered with Maltesers and chocolate buttons.
Real toothbreaking stuff but it always went down well with small, overexcited boys.

Did you find the bakewell cake? I always put much more of the cake mix in the bottom of the tin than on the top. I have also made it with frozen raspberries and dollops of jam, and they worked out really well. But it is the tastiest with fresh berries nomnomnom

I have bookmarked that littlemiss - I have a lot of raspberries in the freezer, and it looks scrumptious :)
