I want to know what curry recipes you have.

I'm thinking of making Monkfish and Prawn curry on Friday and I need to go buy my spices.

So:

List of spices please
Instructions as to how to use them
and
A few different curry recipes would be luvverly!

I don't make fish curries!
dp doesnt like fish. But as you are in London, I would actually recomend looking in an asian supermarket for the spice mixes that you can buy, and I'm sure I've seen one for fish in a sort of punjabi style. My dp's gran uses these packets and the blended spices make a recipe taste so much more authentic than trying to add all the different spices seperately. I made a lovely potato sambhar for with dosa the other week from those packets, it was really easy, basically add the spice mix to potato, onion and water and hey presto!

If you want to go the completely from scratch way, for a start you will need to buy:

cumin seeds and ground cumin
garamasala (tho not so much for fish)
turmeric (lots of this in fish recipes)
proper chilli powder - from an indian shop
fresh chillis
garlic and ginger
dried and fresh coriander

taj or natco spices are good. With the above ingredients you can make a curry from almost anything really! I can post some recipes when you fancy cooking something other than fish.

dried chilli flakes are good to save some time
also cardoman pods are good

Mars as you are doing lovely fish I would perhaps go with slightly lighter, citrussy/coconutty type curry. Tamarind works well this looks kind of right to me. Although I'm sure an esteemed cook of your reknown could alter it to suit

Mars, do let us know what you do with the fish (well, apart from slapping round anyone's head ). I love monkfish......just checking the flight timetables.......

Ok< i've dug out my recipe book and foudn a recipe for monkfish and okra curry. I guess you could replace the ockra with prawns, do you ant it?

I often add mango chutney and creme fraiche [near the end of cooking} for a really sweet and creamy curry. I've done this with prawns but have never tried it with fish.

guess you've gone mars, so will psot it anyway since I'm off out for a bit this afternoon

1lb monkfish
1tsp turmeric
1/2 tsp chilli powder
1/2 tsp salt
1tsp cumin seeds
1/2 tsp fennel seeds
2 dried red chillis
2tbsp oil
1 onion, finely chopped
2 garlic cloves crushed
4 tomatos, peeled and finely chopped ( I never bother peeling tomatos though!)
150ml water
8oz okra
1 tsp garamasala

prep the monkfish, cut unto cubes and place into dish. Marinate in the turmeric, chilli powder and 1/4 tsp salt for 15 mins.

put the cumins seeds, fennel seeds and chillis in a pan and dry roast for 3-5 mins, then blend or grind to a course powder

heat half the oil and fry the monkfish for 4-5 mins. remove and drain.

add the remaining old and fry the onion and garlic for 5 mins, add the roasted spice powder and rest of salt and fry for 2-3 mins. Stir in toms and water and simmer for 5 mins.

add prepared okra (or cooked prawns) and cook for 5-7 mins.

ret8urn fish to the pan with the garamasala, cover and simmer for 5-7 mins or until fish is tender.
