Tired and tested tofu successes

My DC has decided to be vegetarian. So far, out of all the veggie food I've bought, they like one thing. I bought tofu today and have no idea what to do with it. Helpfully the writing on the packet is minuscule and with my bad eyesight I'm struggling..

This tofu is super tasty just fried in a little bit of oil (like, normal frying not deep frying).

The olive one is dleish, as is the basil one. Haven't tried the others. No need to press or season so its a great substitute and quick.

The smoked almond one is amazing. I keep a block in the fridge and keep cutting off a slice, thinking no one will notice. Next thing you know it's all gone Grin

I'm embarrassed to say I don't know what dahl is. Is it a bread like naan or more like a dip?

In terms of amount she is eating slightly better, and yesterday I got her Apple porridge and rice crispies as she should be able to manage those, but in terms of variety it's a bit samey. She's off to my PIL today for a couple of days so hopefully she'll eat okay there. She usually does but that was before.

Dal dishes are normally made either from red lentils or yellow split peas and are flavoured with Indian spices. You can also get other sorts of lentils like urud dal, but I would stick with her ones you can get in the supermarket.

My favourite is Tarka Dal, which has lots of garlic and crispy onions but you can make them milder. Both lentils and split peas are high in iron and red lentils don't need soaking. Google dal recipes - they're easy to make and freeze well in small portions.

I love dahl. Like spiced lentil soup, but can be as thick or spicy as you like. Very comforting, Eat with rice, flatbread etc.

Also, a pp suggested this too, but did apricots are a great source of iron and nice just for snacking on. You could see if she'd eat dried fruit/nuts as a picky treat maybe?

OP said her DD can't eat dried apricots any more because of her brace.

But they can be whizzed up into a purée with a bit of apple juice and added to yogurt or porridge oats.

Funnily enough I was making a milkshake with bananas and plums and found dried apricots when looking for something else so chucked those in as well. She's eaten a varied lunch, omelette, cheese, pretend nuggets, and the milkshake.
