...(according to the use-by date anyway): what would you make with them?

Surely it should be custard based on your name!

I wouldn't bother about the dates, but if you're stuck:

Cake (lots)
Fritata (can freeze)
Eggs bread
Pancakes

Or I think you can freeze eggs if you separate them?

shouldwestayorshouldwego · 21/05/2016 17:52

I never worry too much about the dates. I pop them in water - if they float then they are off if they sink then they are ok. You would know if an egg was off when you crack it. I wouldn't worry about them until up to a week late at least.

FaintlyMacabre · 21/05/2016 17:54

Eggs will keep for ages after their use by date, I'd just use them as you need them over the next week or so.

fusspot66 · 21/05/2016 17:57

You can freeze them and they'll make a nice fried egg later but I eat them after the date!

rufus5 · 21/05/2016 17:57

Pavlova for after Sunday lunch...yum!

nancy75 · 21/05/2016 17:58

Big Spanish omelette, you just need some potatoes and an onion

LBOCS2 · 21/05/2016 17:59

Nigella's marzipan cake uses 8...

SellFridges · 21/05/2016 18:00

I don't worry about egg dates. Just test to make sure they're not rotten. If you are though, I would make some little oven baked Omlette type things.

CodyKing · 21/05/2016 18:17

French custard tarts -

eurochick · 21/05/2016 18:20

Meringues! Strawberries are gorgeous now and would accompany them beautifully. You will be left with a lot of yolks though.

Purplehonesty · 21/05/2016 18:26

Cake
Scrambled eggs
Pancakes for breakfast tomorrow
Meringues

CustardLover · 21/05/2016 18:35

Used 2 to make eggy bread for the DC's dinner, then 2 to make a batch of banana cakes. I'm thinking custard and meringue next. In fact, is there such thing as a custard meringue tart? Illes de flottante! Probably not spelled correctly but still - excellent brainwave!

I've never seen eggs with a use-by date on them. Are you sure it's not a BBE?

Lweji · 21/05/2016 18:40

If they've been in the fridge ignore the date

Cineraria · 21/05/2016 18:40

Try zabaglione (easier to make than to spell although a bit time consuming) if you have told left after the meringues. It's very much like fancy, boozy custard. If you don't have Marsala other sweet alcohol would work too.

LBOCS2 · 21/05/2016 18:51

Custard - a lemon meringue uses lemon curd and meringue, both of which are egg heavy?

FinallyHere · 21/05/2016 19:13

Ohh, pity about breakfast, I'm not sure you have enough for this now
