burgers? tbh they're best with fresh mince though
meatballs?

I am lazy so would make a large chilli, eat half aand freeze half, and a colossal bolognese (eat 1/4 with pasta then freeze 1/4) and make lasagne with the rest (of whcih I'd eat half and freeze half).

et voila, meals for a week and a freezer full of instant dinners.

Munz · 15/01/2007 13:41

I like your thinking mrsb - that's finally what i'm coming around to the idea of freezing and instant meals lol.

meat balls or burgers then it is - we have some chips i'm norty and got some frozen ones. but no rolls - you don't really need a roll do you? not to sound dumb but how do you make the bugers just mold into a ball and squish? can you do them in the george forman or is frying better?

I do my burgers in the food processor, chuck in a couple of onions, some brown bread, the mince, process then add some egg, process till smooth.

(take blade out of food processor) then mould them into shape(with floury hands), we prefer ours quite flat - then cook in the oven for about 20 mins - that way they don't fall apart when you turn them after about 15 mins!

yum

Munz · 15/01/2007 13:50

what's the bread for?

OP posts:
JackieNo · 15/01/2007 13:52

The bread helps hold it together, I think.

Lucycat · 15/01/2007 13:56

It also makes it less dense, and bulks it out so they are less 'meaty'.

Munz · 15/01/2007 13:58

oh right ok then thanks - so do you do it so it's like a pulp type thing?

Hi,you could try,

Beef Cobbler.

Fry onion, carrot,clery,.
Brown mince.
Season.
Add dash of worcestershire sauce.

Make some scone pastry with grated cheese in.
Cut out circles.
Put mince in a casserole dish, put circles of pastry on top, glaze with egg or milk.

Bake for approx 30-35 mins on 190 until scones are done.

MrsBadger · 15/01/2007 14:06

we don't add anything except a finely chopped onion and possibly a little chilli to our mince for burgers - the egg (wet) and the bread (dry) end up cancelling each other out so we use neither.
Don't bother with a blender either, just squidge by hand.
We cook them in a griddle pan so guess they'd be fine in the George Foreman.

meatloaf

Munz · 15/01/2007 14:56

right burgers it is then. thanks.

I like the idea or the beef cobber - does that come out sweet or savoury? I think i'll try that one for later in the week.

Make mince toad in the hole. Cook mince with onions, carrots, celery etc, season, heat oil (in oven) in pan until very hot (as with toad in the hole), add mince followed by pouring batter, cook in oven until risen and done. Alternatively, you can add the mince to muffin tray and add batter and that way you get individual mince in the hole.

Also, keema curry.

Fry chopped onion, garlic and ginger. Add curry powder and chilli powder, then add mince. When browned, add chopped tomato, water, bring to boil, simmer for about an hour, add peas and season to taste, simmer for another 20 minutes.

Munz · 15/01/2007 15:18

ooh i'm loving mince in the hole that's fab! we sued to have frogs in the hole when we were kids (used burgers up in 1/4's)

If you want, add chopped bacon to the mince for mince in the hole - yummy!

purplemonkeywishdasher · 15/01/2007 15:34

sweet and sour meatballs

1/2 cup bread crumbs
1.5 lbs lean ground beef
1 egg slgihtly beaten
1/4 cup grated italian hard cheese
1/4 cup warm water
salt and pepper

Combine all ingredients. form into tiny meatballs. bake in a 350F oven till done (my mom fries them but that takes FOREVER and i'm much too lazy. this works better IMO and if you line the trays with foil there's very little clean up)

For the sauce:
1.5 cups ketchup
4 tbsp brown sugar
2 tbsp vinegar
2 tbsp soya sauce

mix all ingredients and pour over cooked meatballs. the longer this cooks the better this tastes. in fact you can do it in the slow cooker and it's awesome.

The recipe can be doubled or tripled or whatever. you can freeze the cooked meatballs (without sauce - make that fresh) or mix up the meat and freeze it like you would plain mince.

serve with rice.

Munz · 15/01/2007 16:10

woohoo thanks love that recipe as well - so much choice now! lol. will have to try the meatballs out on the PIL when they come down! lol.

Munz · 15/01/2007 16:30

what's meat loaf like? i've never had that - gopt DH doing the burgers - he's well trained

OP posts:
Lucycat · 15/01/2007 20:18

How were the burgers munz?

all still alive?

Munz · 16/01/2007 08:41

yes we are thanks! lol.

we did use 1 egg, as DH insisted upon it?? anyhow, there was too much onion and not enough flavouring/seasoning, so I guess we know for next time - we are going to prep them when the meat's fresh and then freeze them so they're ready.

OP posts:
Lucycat · 16/01/2007 11:07

Did you process the onion or just chop it?

My dd's pick the bits of onion out of the burgers if they can see them lol

Glad they were a success (overall) another thing to add to the Munz family meal planner?
