you leave it to go cold, my love, then it solidifies and you scrape it off

Either let it go cold and lift off the raft of solid fat or gently skim slices of white bread over the top of it, it soaks up lots of the fat.

put it in a tall container
use kitchen roll on the top

If I don't have time to wait fo rit to go cold I use kitchen roll.

I read a tip suggesting that you should put a few ice cubes in, the fat solidifies around them. Alternatively apparently a lettuce leaf will do the job too. Never tried these, don't know, just passing them on.

I nearly always reduce my stock right down to freeze it, and don't usually bother about the fat. However, the stock gets so thick and glutinous when you do this that it;s much, much easier to spoon the fat off the top at this stage.

yeah but if you leave it outside like I did with my vat of turkey stock, the cats get into it.

i just use one of those big spoons with spouts on them it comes off easily

I'd suggest that there might have been too much water if it didn't solidify .. try heating it again, maybe add a stock cube (I know) and simmering off some of the liquid so the flavour enhances .. then let it cool again

or chuck it out

(have recently started cooking medium egg noodles in fresh chicken stock with the carrot, celery, onion left in .. then adding stir fry veg and chinese 5-spice and sometimes some big strips of chicken .. eat your heart out wagamama )

chucking some mushrooms in the stock while it's cooking helps soak up any fat.. ..also regular skimming..
