Chicken lemon pie - add lemon zest and juice to sauce, lovely!

The cheaty way is to mix a tin on Campbell's condensed soup into your ingredients - I use the mushroom one a lot.

Blackeyed bean pie:

Pastry on bottom
Bottom layer of filling: chopped onion and carrot fried with some rosemary and basil.
Middle layer of filling: cooked blackeyed beans (2 x 300g tins)
Top layer of filling: 1 tin of chopped tomatoes. Then sprinkle over 2tbsp of soya sauce before putting the pastry on top.

very easy

Tuna fish pie. One large tin of tuna, flaked. Two hard boiled eggs, mashed up. Add them to thick white sauce made with 3oz flour, 3oz butter and about half pint of milk.

Lay the filling on top of a sheet of rolled out puff pastry. Wet the edges. Lay second sheet of pastry on top and press round the edges to seal. bake till golden brown. Serves about 4. Should come out the same size as a baking tray more or less.

Beef, Guinness & mushrooms. Make stew in saucepan, put it (at simmering temp) in a big flattish ovenproof dish, stretch rolled-out puff pastry over the top & bake.

Flattish dish is important so that everyone gets enough of the delectable puff pastry.

Jamie Oliver has a very yummy, according to DH and DD, chicken and sweet leek pie.

Ingredients
Olive oil
2 knobs butter
2lb3oz chicken, cut into pieces
2 medium leeks, trimmed, washed and sliced into 1/2 inch pieces
2 carrots, peeled and roughly chopped
3 sticks celery, finely sliced
Small handful of thyme, leaves picked
2 tablespoons flour
1 wineglasswhite wine
1 1/4 cups milk
Sea salt and freshly ground black pepper
9oz good pork sausages
1lb package of all-butter puff pastry
1 egg

Preheat the oven to 425°F (220°C). Take a large casserole pot and add a glug of olive oil and your butter.

Add the chicken, leeks, carrots, celery, and thyme and cook slowly on the stove for 15 minutes.

Turn the heat right up, add the flour, and keep stirring for a couple of minutes before adding the wine, a wineglass of water, and the milk. Season with a little salt and freshly ground black pepper.

Cover with a tight-fitting lid and simmer very slowly on the stove for 30 to 40 minutes until the chicken is tender.

Stir it every so often so it doesn't catch on the bottom of the pan.

The sauce should be loose but quite thick. If it's a little too liquid, just continue to simmer it with the lid off until it thickens slightly.

(At this point you can let it cool and keep it in the fridge for a couple of days if you want to ? it can also be eaten as a stew.)

Pour the chicken mixture into an appropriately sized pie dish. Squeeze the meat out of the sausage skins, roll it into little balls, brown them in a little oil and sprinkle them over the stew.

Roll out your pastry to about 1/4 inch thick. Egg-wash the rim of the dish and drape over the pastry, using a knife to trim the edge of the dish. Egg-wash the top of the pastry to make it go golden while cooking, then pinch it to crimp it round the edges. Use the back of a knife to lightly crisscross the top ? this allows the pastry to go crisp and flaky.

Cook the pie in the centre of the oven for about 30 to 40 minutes, until golden on top.
