I am TRYING to cook a blardy vegetarian shepherds pie BUT...

...stupid recipe has a can of mixed beans in it what is it with you veggies and your ruddy beans?! Me and dh hate beans. What would be a good substitute? Sweetcorn?

FGS...show me the way you none meat eaters before I give in and put some MINCE in (da da daaaaaah)

What else is in the recipe? If it's not entirely dependant on the beans then any kind of beans would do - sweetcorn would be fine. If the beans make up the bulk of it then sweetcorn probably wouldn't work.

Have you got any baked beans in the house? You could use those plus the sweetcorn.

parsnips, carrots, beans, passata, red onion with a sweetpotato and cheese mash.

Sorry KTeePee, dh and I don't do lentils/pulses/beans of any kind.

I think either quorn or mixed veg, but I would be tempted to do a mixture of corgette/peppers/aubergine sort of things and make it with that. Not really shepherds pie at all, but would prob be quite nice. Could even do a sweet potato mash on top...

I'd sling in any other veg I had lying around, the sweetcorn, and possibly the baked beans. If you have any chickpeas or any other type of bean, sling those in as well. It'll be fine. I wouldn't bother with Quorn or soya mince as lots of vegetarians don't eat those things.

Realeat Vegemince, onion, leeks, carrots, mushrooms, courgette, green beans, tomatoes....I've never put beans in a veggie shepherd's pie.

Green lentils and red lentils mixed. But I like beans so I'd be OK with that as well.

I use veggie mince then my DH/friends don't heave so much...us veggies are used to one pasta dish out of the house so any kinda pie you're making will go down a treat.

It wasn't nice
I only have one good vege dish that I can cook and that's oven baked asparagus and tomato risotto (really easy)
Looks like my friend will be having that and veggie fingers while she's visiting!

I think with veggie food, tbh the trick is to do meals that are not trying to be veggies versions of "normal" dishes but that are nice in themselves. I'm not a veggie but have often been to a fab vegetarian restaurant near where my PIls live - I have a recipe book from there - can have a look and see if there is anything easy in that? Tell us what vegetables you and your dh like and I'll see what I can find....

Pasta dishes are possibly your best bet or a veggie curry?
