How about meals that you can make in bathhc and then freeze. Then justtake them out in the morning and reheat in the evening in 20 minutes or so?

Cottage Pie
Casserole
Soup
Chicken Pie
Pasta sauce
etc.

Fish is very quick and easy to cook, especia;;y thinks like tuna and salmon. Serve wih rice and salad.

would your dd like anyone to talk to? i'm only 18 so not much older than her and could lend and ear if she wanted?

the simplest soup is sweat vegetables eg onion carrot and celery, brocolli/cauliflour/potato(not much potato or it will get a sticky texture), lentils/sweet ptoato, mushroom/chicken, or any combination you fancy and then add some stock or water, dreied herbs and salt and pepper simmer until veg is cooked and then liquidise

you can make almost any variation including substituting milk or adding it or add craime fraiche at the end like this alternatively

try softening spiring onion very thin matchstick carrot, chilli and ginger stock or herbs and water garlic and lemon grass and simmer..could add shreds of chicken, mushroom or prawns and simmer..add noodles towrads the end.

I like the idea of making meals in the bath by the way, Hula!

Hulababy · 12/01/2007 08:22

LOL at bath

Simpliest soup I do is the one I do to take to work each day: onion, potato and carrot, add some stock, black pepper and fresh coriander. Whizz up when cooks (takes about 20-30 minutes max) and thrown on more fresh coriander when served. Cheap and easy tomake, but suprisingly tasty. I sometimes throw in other veggies depending on what is left over in my veg box.

Any soup can be made more nutritious by the addition of lentils or other stuff, such as pearl barley.

You could make a large lasagne at the weekend, divide it into single portions and then freeze. Same with cottage pies, etc.

can she not cook>

Biglips · 12/01/2007 09:22

its best that you teach your dd as she gotta learn to cook for her LO.

Paddlechick666 · 12/01/2007 09:26

I use my slow cooker constantly.

Takes about 5 mins in the morning. Chop an onion and some meat and add some veg. Add some white or red wine (depending if chicken or beef) some garlic and stock and water.

put it on low till you get home and thicken with gravy granules.

you can use frozen veg to make it quicker.

serve with mash which i do in batches and freeze or get dd to bake a spud in the micro/oven.

dont' worry about the booze - it cooks off and just leaves the nice flavour.

any leftovers go in the freezer too.

i've given up making soup unless i've roasted a chicken or got pumpkin to use.

i buy Tesco own brand fresh soup and find the Tomato & Basil and Minestrone delicious. I have half a tub and a salad and some granary bread one night and finish off the next.

HTH and best wishes to your DD.
