Roast chicken and crappy cooker question.......

I want to cook a roast chicken for tea but....i need to go out at 1.30pm, the chicken neeeds to be cooked for about 5pm and my gas cooker no longer wants to self ignite so I can't set the timer on it.

Can I put it on a verrry low setting when I go out or will it just disintegrate?

Can't get my head round it atm

oh and it's a 1.9kg one,so should only take 2 hours at the very most.

I would cook it this morning so i would be sure it would be cooked, and then slice and reheat in gravy.

I'd put it on at a low setting, but leave it covered in foil, so it doesn't end up dry, iyswim. Overcooked chicken is nice (imo) as long as it's not dry.

Blumenthal is always going on about cooking meat at a low temperature, for hours and hours.

I should be back home for about 4pmish, I tend to almost braise my chicken for an hour anyway, wrapped in foil then turn up the heat, remove the foil and let the top crisp up.

I've seen how Heston makes mashed potato - he clearly doesn't pay my gas bill
