Had to share this with you as it was
a) easy
b) delicious
c) had lots of child involvement, which makes it fun
d) oh yes and there is chocolate involved!
It's a Bill Granger recipe called Lamingtons
Cake:
6 eggs
150g caster sugar
200g self raising flour
30g unsalted butter, melted
chocolate icing:
500g icing sugar
200g chocolate (it said dark but we used dairy milk)
15g unsalted butter
125ml milk
375g dessiacted coconut
Preheat the oven to 180 (350/gas 4). Lightly grease and line the base of an 18 x 28 (7x 11 inch) tin.
Beat the eggs with a mixer for about 5 minutes with an electric mixer until light and fluffy. Gradually add the sugar and continue beating until the mixture is thick and the sugar has dissolved. Sift in the flour and fold in lightly. Add the butter and 3 tablespoons of hot water and stir gently to combine. Pour into te tin and bake for 30 minutes, or until golden. Cool on a wire rack.
To make the chocolate icing, put the sugar,chocolate, butter and milk in a heatproof bowl and place over a saucepan of simmering water. Stir constantly until melted and mixed together.
Cut the sponge into 16 square (some of those we cut in half again to make little bite size pieces).
Put the coconut in a bowl. Dip each sponge square into the chocolate icing and then in the coconut. (Best way was to get ds to put it on a skewer, put it in the mixture then spoon the sauce/coconut over with a spoon).
Leave on a wire rack to dry completely.
