I know I should start but am at work and my recipes are at home so I'll post a tried and tested recipe or 2 tonight and will continue to do so each time I make a low fat / low carb but tasty dinner.

I'd love to read some of your receipes so I don't get bored with the ones I have.

Yes, do bother, I am doing a lowish fat diet atm, and have just got a Rosemary Conley book out of the library.

Will post a recipe in just a mo...

Ok I think you probably meant main course type recipes but here's one to start you off..

I haven;t tried it yet because I couldn;t get any polenta from Tesco but as soon as I get some I'm trying it.

Pear & Lemon Polenta Cake

175g tin of pears
115g castor sugar
75g plain flour
50g polenta
3 eggs
2 lemons
1 tsp baking powder

Drain & mash the pears in a large bowl
Beat in sugar, then add flour, polenta & eggs
Add zest of 2 lemons & juice of 1
Beat in baking powder & pour into a lightly greased 15cm (6in) cake tin.

Bake for 40 mins 180c (350f/Gas mark 4)

Drizzle with remaning lemon juice when cool.

316 cals / 5.2g fat per serving apparently...

OK - So tonight's dinner:

I got in from work at 6.30 put kids to bed and then started dinner, ready to eat at 8.20 ish.

It was full of flavour, serves 4 and is 505 calories a person and 10g fat.

MEDITERRANEAN BAKED CHICKEN & RICE

olive oil
4 skinless chicken breasts - halved
1 large mild onion - thinly sliced
2 red peppers - thinly sliced
2 cloves garlic - crushed
1 orange - segmented
8 black stoned olives - halved (but I left them out)
6 sun-dried toms - finely chopped
1 tbsp tomato puree
1 tsp dried herbs de Provence or 1 tbsp fresh herbs (such as parsley, basil, thyme, and oregano)
s & p
225g rice - long grain or brown rice which if using brown you may have to cook for a little longer)
500ml chicken stock

Heat oil and cook chicken until browned then remove and set aside

Add bit more oil and cook onions and pepper until softened / golden. Add garlic for last moments of cooking

Add orange, olives, tobasco, sun-dried toms, tomato puree, herbs and seasoning.
Stir well, add rice, stir well.

Pour in stock. Add chicken. Bring to simmer and transfer to oven @ 170 C for about 45 min until chicken ^ rice are cooked and stock almost completley absorbed.

Check 10 mins before end of cooking time. If not enough moisture add a little more hot stock or water.

If using brown rice it may need to be cooked a bit more.

Serve on it's own or with some green beans?

mmmmm. any more ideas? I'm doing low carb buut miles more boring. That sounds lovely

Yesterday we had:

HERB-STUFFED CHICKEN

One serving: 309 calories, 2g saturated fat, 2g carbohydrate

2 skinless chicken breasts
2 tablespoons fresh tarragon
2 spring onions
2 med mushrooms
2 tbls fat-free plain yoghurt

Make slit in chicken

In food processor (or by hand) chop tarragon, spring onions & mushrooms

Add yoghurt and blend well

season to taste

spoon stuffing into slit

It says to brown breasts in frying pan, spraying with some oil, and cook for 2 mins on each side, then lower heat cover with lid and cook for 6 more mins.

HOWEVERRRRRRR, I put them in the oven for about 20-25 mins and baked them.

I served with steamed asparagus.

Was YUMMY.

Tomorrow I'm having left over's from tonights med baked chicken but Thursday I'm having:

GLAZED BALSAMIC CHICKEN

One serving is 378 calories, 2g saturated fat and 4g carbohydrate, 54g protein, 144mg cholestoral

olive oil spray
350g boneless chicken breast
12ml balsamic vinegar
25g pine nuts
1 tbls dijon mustard

Heat pan, spray with oil, cook chicken

remove chicken and keep warm

add vinegar and pine nuts cook over med heat to reduce for about 30 seconds or till half liquid remains

Add mustard and mix to make a glaze

Add chicken, coat, cook for a minute and serve.

I will be serving with galicky grilled courgettes and mange tout.

Teecee - no offence but you are getting through a lot of chicken there! I have to say though that all your recipes sound fantastic and are making me feel hungry right now. Luckily I have a carrot to gnaw on.

I guess this chicken and veg soup I made last night counts as low carb/low fat. I tasted it and it tasted great but we are eating it tonight.

Fry 1 large onion and 2 cloves garlic in olive oil. Add 1 tbsp flour. Then add lots of root veg (I used one smallish swede, 3 carrots, 3 parsnips), and about 1.5 litres of chicken stock/water. I used half/half plus some marigold powder. Then I also added worcester sauce, fines herbes and black pepper. I cooked this for about 1/2 hour, then blended with hand blender. Added 8oz chopped up cooked chicken (leftover from roast), and sweetcorn.

Are chick peas low fat/carb?

We do eat a lot of chicken actually. IS that a bad thing do you think?
It's just we both like it, it's better than eating too much red meat isn't it and less fatty than lamb and DP doesn't massively love pork or fish. Makes it quite hard!

The soup sounds lovely.

Yes I think chickpeas are defo low fat / low carb.

No chicken is good (our favourite meat too) and I can deffo see how it would feature in a low fat/carb diet, especially if not keen on fish.

DH and I are not keen on fish which I find very limiting. I think I would try it more if it wasn't for him. I just asked about the chickpeas because I made a chickpea curry the other day, which we had with brown rice and brown chapattis. I guess that is too much carb with both rice and chappattis though. I got the recipe of the bbc site so will try and find it.

Here is the chickpea recipe:

Ingredients
1 tin of chickpeas (drained and rinsed)
1 tbsp oil or knob of butter
1 onion (chopped)
1 clove garlic (crushed)
2 inch piece root ginger (grated)
¼ tsp red chilli powder
½ tsp cumin powder
¼ tsp coriander powder
¼ tsp turmeric
¼ tsp salt
1 fresh tomato (chopped or 1 small tin of tomatoes)
a pinch of garam masala

Method

  1. Heat a deep saucepan or a medium sized wok and add the oil or butter followed by the onions and garlic.
  2. Fry the mixture till the onions are caramelised. Then add the salt, cumin, coriander, turmeric and red chilli powders. Mix for a minute and tip in the tomatoes. Cook the sauce until it begins to thicken.
  3. Add ¼ cup of water and stir. Then tip in the chickpeas and mix. Mash a few of the chickpeas while cooking. Cover and simmer for 5 minutes. Then add the ginger and the garam masala. Cook for another minute.
  4. Serve with pitta breads or plain basmati rice.

Not sure about salmon. Bit strong for me. I think I can just about manage a tuna steak!

wow tc I could cook for the next week from your recipes - all sound lovely. We eat a lot of chicken too - it's ver versatile whereas pork/lamb just look like chunks of meat to me . plus red meat is much fattier than chicken/fish. We do eat fish too though but not Salmon as I went off it when pg with ds and never really liked it again after that.

Isn't rice quite high in carbs though?

no no not salmon, rice . fish is ve high in protein and low carb. will check the carb contents .. try having a look at

when I remember I use it for the food/exercise diaries, but often I just use it as a point of reference, i.e. I want to eat x, how many calories does it contain.. dh says I should just sign up as a member but I don't want to pay

tc absolutely rice is fine, if you're only doing low carbs instead of no carbs then a bit of something isn't going to hurt.

you can sign up for a 3 day trial and then still have access to everything. so if you want to put in your wait etc to have "goals" then obviously you'd have to pay, but if you just want to know what you're eating on a day by day basis then just sign up with a new username every three days and you can access the food diary. and details are deleted every 14 days so after 14 days you can go back to the first username you used so no need to keep thinking of new ones iyswim.
