cutting out fondant icing - scalpel?

Need to make a cake which involves a football club crest. Never attempted anything like this before.

Was thinking of making a cardboard template and then cutting round with a scalpel - does that sound ok?

Going to use ready to roll fondant, was wondering if it was better to roll it and then leave it for a bit to harden before cutting?

Any sharp knife will do it, or scalpel.

I would cut it straight away but you might get a different effect by leaving it, try both? If you want it to be really thin I'd use flowerpaste instead of sugarpaste though.

For straight lines I use a pizza cutter too, but I assume the crest will be curvy. I would make a template then put it on the icing and use a small sharp knife to cut around it. Ready roll usually only comes in white - sainsburys do good blocks of coloured fondant icing if you need other colours.
