Tasty soups for toddler & adults- ideas please?!

Hi there, anyone got some good tasty soup recipes that would suit a teething toddler & satisfy us grown-ups? We were at a wedding reception the othr day and my LO loved the carrot & ginger soup, so any suggestions would be welcome! Also I'm veggie just to make it harder!!

How about a classic leek and potato?

Use creme fraiche to make it creamy - I se the one from Annable Karmel when dd1 was little and we've just carried on!

Parsnip and honey? - lovely and sweet

Roast parsnip soup

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients
1 tbsp olive oil
knob of butter
4 parsnips, peeled and chopped
1 clove garlic, peeled and chopped
2 tbsp honey
salt and freshly ground black pepper
55ml/2fl oz creme fraiche
splash of hot veg stock

Method

  1. Preheat the oven to 220C/425F/Gas 7.
  2. Heat the olive oil and butter in a large ovenproof non-stick frying pan and sauté the parsnip for a few minutes.
  3. Add the garlic,honey and seasoning and continue to heat for a further 5-6 minutes.
  4. Transfer to the oven and roast for 10-15 minutes.
  5. Remove the parsnips from the oven and place in a food processor with the cream. Blend until smooth, adding a splash of stock to thin.
  6. Return the soup to a pan and warm through. Serve at once.

This is one of dh's favourites!!

I love Tuscan Bean and so does DS. I have the recipe somewhere and will dig it out if you want it - it's the Covent Garden one. Lots of garlic and beans! Yummy.

We all also like lentil soup. And thick veggie soup, thickened with potato rather than cornflour.

to combine two ideas from below... parsnip and beetroot soup is lurrvely. And a dollop of horseradish in the adult bowls is great.

Butternutsquash and carrot soup. REALLY EASY to do.

Big blob of butter in saucepan, let it melt gently.
Add chopped up and peeled butternutsquash and about 8 carrots. Put lid on and let the vegetables 'sweat' for about 30 mins. Make sure heat is very very low and give it a stir every now and then.

Then get a vegetable oxo cube and add boiling water. Pour over butternutsquash and carrots so that they are well covered (but not swimming iyswim). Let simmer for about 20 mins.

Take off heat and whizz with an electric hand whizzer thing so it becomes like a thick smooth broth! and hey presto, yummy soup. Can even be given to a weaned baby.

soups are basically just great aren't they. Nice and unfussy to prepare, and 90% of them turn out to be lovely.

Thank you everyone! Lots of ideas, great- making my tummy rumble already! Have added a good few ingredients to my shopping list so I can make some of these! I was never really into cooking til I had DS, but now I love preparing good food for him so learning gradually!

CorrieDale- could you dig out that recipe for Tuscan Bean soup, sounds yummy!! Thank you!

Sweet potato and red pepper. Peel and chop the sweet potato add a large onion chopped in half or quarters. Half a couple of red or yellow or orange pepper and roast in the oven. Put peppers in a sandwich bag until cooled then peel th skins. make up some stock and whizz the whole lot in a food mixer until smoothish. Then turn out into a saucepan and add more liquid until it is to the thickness you like. Add salt and pepper. You can add a bit of chilli powder for a little kick if you like.

Its easy and very delish.

Tuscan Bean soup a la CGS Co

Tin of mixed pulses in brine or water
1 tbsp olive oil
1 large onion, chopped
1 small leek, sliced
4 garlic cloves, crushed (I did say there was a lot of garlic...)
1/2 pt veg stock
1 1/2 pts water
14 oz tinned chopped toms
3/4 oz finely chopped fresh flat-leaf parsley
3 oz mushrooms, sliced
3 oz fresh or frozen green peas
1tsp chopped fresh oregano
Black pepper
(Salt is also in the ingredients list but in the interests of feeding DS, I wouldn't add it)

Heat oil and cook onion, leek and garlic gently until soft in a covered saucepan, without colouring. Add stock water and drained beans. Cover, bring to the boiland simmer for about 15 mins. Add everything else, cover and simmer for another 15 mins until veg and beans are tender. Cool a little then puree a quarter of the soup in a blender. Return the soup to the pan, taste for seasoning and simmer for 10 mins. Serve.

It keeps for a day or so. Can also be frozen.
