Making eggnog for the first time, your advice please!!!!

Hi!! On New Years Eve I am making eggnog to this recipe:

? 6 eggs
? 1 cup + 1 tablespoon sugar
? 1/2 teaspoon vanilla extract
? 1/4 teaspoon ground nutmeg
? 3/4 cup brandy
? 1/3 cup dark rum (Captain Morgan for best flavor, but Myers is OK)
? 2 cups whipping cream
? 2 cups milk
All liquids should be very cold. Refrigerate in advance.
Beat the eggs for 2 or 3 minutes with an electric mixer at medium speed until very frothy. Gradually beat in the sugar, vanilla and nutmeg. Turn the mixer off and stir in the cold brandy, rum, whipping cream and milk Chill before serving. Sprinkle individual servings with more nutmeg.
Makes about 2-1/2 quarts.

These are American measurements I am converting them to English ones. Also I am doubling the recipe because I want to make enough to give 4 adults 2 portions each and I have heard that its roughly 1 egg per portion.

Has anybody made eggnog and if so do you have any tips for me?

I've not made eggnog. I keep meaning to, but DH is twitchy about raw eggs, so ...

In my experience, British people don't eat a lot of eggnog. It's very very filling stuff. I'd be surprised if one portion wasn't enough, tbh. (Just think of how many calories there are in all that - makes for a very filling drink!)

Whipping cream is double cream, I think. By the way.

Thanks for replying NQC. I know what your DH means but I dont care I throw caution to the wind when it comes to eggnog. I know its not so much a done thing over here (I'm american though I have lived here for years)

Thanks for clarifying about the whipping cream, I thought that was what it was but I wasnt sure so was going to look that up.

Well, we do end up eating raw egg all the time, anyway. I mean, I lick the bowl when I make biscuits/cake. And I make a really tasty ice cream type thing that's full of raw egg. DH just claims that freezing is the same as cooking and I generously pretend to agree.

From what I know, as long as the eggs are fresh, good quality eggs, and you're not feeding them to pregnant people, immune suppressed people, or small children, it's fine.

You can get eggnog lattes from Starbucks. I do that when I have cravings.

I found UHT eggnog in Tokyo (it was good, and transportable), but I've never seen it anywhere else.

expat I dont like brandy on its own only in eggnog! Thanks for the advice though.

I love the sound of eggnog lattes I will have to look for a starbucks around here, I live in the country.

Amanda I love the sound of that setup would be great to have it delivered!

Well I am going shopping today for some rum imiatures. Yay!

I made it last night and it was sooooooooooooooooooooooooooooooooooooooooooooooooo good and a total hit, everyone loved it. Its like a much nicer version of Baileys. Would HIGHLY recommend this recipe!

hehehe yeah I drank enough to be considered an expert! I swear this is the definitive recipe though it was DEAD easy to make and a real hit!
