Since having two children I am finding the recipes I usually use two complicated and time consuming. For example making homemade fishcakes took me an hour tonight while my eldest ran round the kitchen and youngest clung to my leg. I am not a great cook I have taught myself with a recipe book but would like to switch to basic easy meals instead. Can anyone give me an example of a quick easy family meal that doesn't create loads of washing up? I am aiming to get 10 I can rotate. Thank you Smile

Tacos... A huge fav of my dcs.
Unfortunately I do use a taco seasoning mix with it. One day I'll make my own, but the recipies seem to use uncommon ingredients. I use mince meat but really pad it out with lots of grated carrots, onions, celery, whatever is in the fridge. Then we make our own with natural yoghurt, diced tomatoes, avocado, cheese, sometimes grated carrot (lettuce is not popular her - 4dcs b/w 4-9yo). Everyone makes their own.

Sometimes I do the same with falafel so but in wholemeal pitta, but it is falling out of favour at the moment with dcs.

Similar Tomato and basil sauce with balsamic and sugar. Making at at the moment! Sometimes I put in sausages squeezed out of their cases as meatballs. Wholewheat taglettali tonight.

Hamburgers, dcs love them. Homemade coleslaw on the side. Or steak sandwiches on ciabatta. I almost always offer frozen corn, cherry toms, carrots or cucumber sticks before dinner when they are really famished!

I'm trying to expand my vegetarian repitoire as a way of making it a little more healthy and cheaper!

Mushroom sausage rolls - pre rolled puff pastry, chopped mushrooms softened in a pan with garlic whole grain mustard and tiny dash of vermouth. Reduced down. Into pastry and folded up like sausage rolls.

Sausage and cherry tomato bake (jamie)

Pea and courgette carbonara - finely chop carbonara and soften in a bit of butter. Boil pasta add peas at last min and drain. Add courgettes along with an egg while all still hot plus grated Parmesan and pepper and mix like mad. Egg will make a sauce that is lovely.

Any old roast veg on puff pastry with mozzarella on top and in oven for easy tart.

Black bean and sweet potato quesadillas

Cauli and brocc cheese

Most soups pretty quick. Mine like watercress best or leek and potato.

BBQ pork belly - cider, soy, tomato purée and little bit of sugar and garlic all mixed together and used to glaze pork belly.

Any old white fish cooked in tomato sauce with capers and olives

Jamie Asian salmon skewers

Veg fritters - grated veg, but of flour, an egg plus parsley and spring onions if you have.

Spinach and lime pancakes

I've learnt to do little prep jobs throughout the day, so that at teatime (melt down hour often in our house), tea is either a ten min job, or pop in oven and put pan on with little effort.

3 dcs here, youngest 15mo. I always have jkt pot on menu each week, beans & cheese, or tuna and sweetcorn, with salad. Often I'll pop the potatoes in the oven with roast chicken on sun, so just microwave 5mins mon quick tea, but still good skins! Then chicken leftovers tues, usually with a rice or noodle dish to bulk out with stir fry veg.

I do make a huge pot of bolognese or veg pasta sauce once a week or so and freeze portions, but tend to start it off in the morning, so all the chopping and fiddly bits get done when ds2 is happily pottering.

I find meals with chicken breasts, salmon etc good as foil parcels, again pop the meat or fish in foil parcels early in the day and put the baking tray in the fridge (this way I can put flavours the dcs refuse on ours and just mild flavours / lemon on theirs). Then 20 - 30 mins in oven, and veg / carbs choice on to boil or stir fry at the last minute during that time.

If we're having a stir fry rice dish, I'll often fry off an onion early in the day and let it soften over a low heat, sometimes with some spices, so I can add that to the rice later when it's cooked. I might add veg, eg pepper, courgette, mushroom, then pop it in fridge to add later.

Have given up on making my own fish cakes (I feel your pain) but do tend to have one meal a week of some form of breaded fish / Fishfingers with oven chips / waffles / new pots / wedges with veg.

Mash is another one I tend to make and mash in morning, then reheat at teatime, so eg sausage and mash sort pots and prep any veg ready in morning, then pop sausages in oven at teatime and just reheat mash whilst veg boiling.

Chicken thighs with skin on into oven tray with sweet potato wedges. Add dried oregano, pepper and olive oil. Mix well. Stick into pre heated oven for about an hour. Literally forget about it. I serve it with peas & carrots.

Roasted Butternut squash risotto is a nice recipe. And it gets another type of veg down them! Pre- roast the squash until not quite done and wait to cool before taking skin off and cutting into chunks. Do at night and refrigerate ready for next day.

Great thread! Love the tips from daisy. Have just gone back to work following maternity leave and finding it a struggle to cook from fresh every day.

My contribution. Fry an onion and some garlic in a pan, add black/kidney beans, chopped tomatoes, chopped pepper, chilli and paprika. Sprinkle with cheddar cheese, crack eggs over the top and stick under the grill. Serve with avocado and some crusty bread.

I'm a big fan of tray bakes too. We usually have sausages, veg and sweet potato wedges or chicken with whatever veg we fancy/can get our hands on with balsamic vinegar.

Chicken fajitas (done with the fajita kit, chicken, peppers, onion, cheese, sour cream)
Chilli and rice
Spaghetti (or pasta) bolognese
Homemade burger and chips
Chicken curry and rice
Chicken stir fry (might not be good with children who might be fussy with veg etc - I know I would have been at that age!)
Enchiladas
Pasta bake
Stews (very easy, again difficult sometimes with children)
Hunters chicken and rice
Roast dinner (leftover meat could be used on other meals)
Pasta and meatballs
Fish, mash, parsley sauce and green beans

V easy pie -
I buy a packet of ready chopped butternut squash and sweet potato. Roughly chop a couple of peppers and onions, and a courgette if I've got one. Roast them.
Mix with a couple of teaspoons of red pepper pesto and some diced mozzarella.

Use bought, ready rolled shortcrust pastry to make a giant sausage roll. Slit the top a couple of times and bake.

Things that take seconds to prepare and then are cooked in the oven are easiest:

Chicken thighs tossed with a little olive oil, garlic paste and herbs in a baking tray with cherry tomatoes, baby potatoes or potato/sweet potato wedges and quartered red onion with a glass of white wine or chicken stock poured over them. Prep time is 10 mins max including children on your leg. Cooking time 35-40 mins. Serve with crusty bread and salad or with rice (10 mins in microwave.)

Baked salmon: glaze with soy, honey, lemon juice and grated ginger. Loosely wrap in foil. Bake for 25 mins. Serve with egg noodles and steamed mange tout and broccoli (5 mins for noodles, steam the veg on top of the noodlesfor sam amount of time.) Toss noodles in soy and sweet chilli before serving or leave plain for smaller DC. Prep time 15 mins max.

Slow cooker: chop good sausages, one red onion, one large peeled carrot, two slices of streaky bacon and add a tin of chopped tomatoes, a tin of mixed beans, some smoky paprika, thyme, Worcestershire sauce, garlic paste. Serve with baked spuds or rice if you don't have time to peel and mash. Prep time 15 mins max.

Baked potatoes with microwaved baked beans or chilli beans, grated cheese and salad is a good standby.

Don't feel bad about using ready made sauces while DC are small. It's not forever. I use tomato and mascarpone fresh sauce or fresh pesto with spaghetti and a bag of salad on busy nights.

Lentil & vegetable soup takes hardly any time to put together, then just simmers away (and popular with dc in my experience).

Heat a good slug of olive oil in a big pot. Chop up lots of veg including some combination of onion and/or leek / carrot / swede / celery / turnip / squash and fry for a few minutes. Add 1/2 mug brown or green lentils, a tin of chopped tomatoes, water to cover generously, another slug of olive oil and a couple of teaspoons bouillon powder or a veggy stock cube.

Bring to the boil, then simmer for 45 minutes or so until the veg is all nicely soft & the lentils are done. Either serve or turn off & let sit then reheat whenever you want it.

Dumplings are a nice addition - mix 4 oz self raising flour, pinch salt, 2 oz suet (or veggie suet) and water to bring to a dryish dough. Drop walnut sized balls of dough into boiling soup, cover, and cook for 20mins.

Salmon with pesto gnocchi is one of mine. Fry salmon. Boil gnocchi as per packet instructions. Drain gnocchi and stir through some good quality pesto. Sprinkle over parmesan. Serve together with salmon with lemon wedge if feeling fancy and a bit of greenery.

Baked risotto. 300g risotto rice and 700ml stock as a base and then add whatever you like to it. I really like it with lots of green, springy veg so frozen beans, green beans and asparagus.

Egg fried rice is good and quick too, especially if using leftover/precooked rice.

Possibly not that healthy ( but as it's homemade I don't think it's too bad) but homemade pizza is quite a good one. Dough is really easy to make ( you just need to find 10 mins kneeding time when dc aren't going to keep wanting you to do things!) You can top it with homemade tomato sauce, cheese and loads of veg. A favourite in our house. Plus sometimes dc can 'help' a little - I.e give them a small amount of dough to play with whilst you do the real stuff!
