Can anyone suggest anything please?

Have thought of:

  • Curry
  • Potato waffles baked sweet potato and beans
  • Roasted veg with homemade chunky guacamole
  • Falafel burgers (off the BBC Good Food website)

Huh, that's actually more than I thought! Would still love any suggestions.

Fajitas, veggi rather than chicken of course.

Cottage pie with lentils and beans rather than meat.

Pasta dishes.

Stuffed peppers with cous cous.

Vegan sausage casserole.

I'm not Vegan but my son is dairy free so have to adapt family meals that way.

Also I think tortillas (both corn and soft ones) are vegan, so various mexican type things without cheese or sour cream, but guacamole still ok.

These are our staple vegan family meals-

Bean and veg chilli
Loads of different curries
Spag Bol with soya mince
Shepherds pie with soya mince and lentils
Lasagne
Pasta and pesto
Pasta and loads of veg/sauce
Pie and mash
Roast dinner using veg sausages
Fajitas
Burgers and chips
'Cheesey' potato bake
Home made soup and bread

So basically everything everyone else eats just veganised GrinGrin

Great to know tortillas are vegan - could do homemade tortilla chips and guacamole.

Also never thought of making a roast with veggie sausages! Great.

Sparkly can I ask where you buy vegan pesto or do you make your own? As I do... erm... obviously, all the time! Grin

Haha I never make my own! You can get the Scala brand dairy free pesto or another one with a French name from the Free From isle in most supermarkets :)

Dhal
Lentil bolognese, or puttanesca with olives instead of anchovies
Chick pea and root veg tagine
Stir fry with cashews and noodles
Loads of hearty soups - minestrone, ribollita, borscht, tomato and lentil etc
Pies or veg tarte tatin, most ready made pastry is vegan

The Veganuary website has lots of recipes including variations of common meals, and Cooking on a Bootstrap (formerly A Girl Called Jack) now has vegan recipe.

Oooooh thanks for the links and suggestions. Really useful. I love beetroot but have never made borscht. Will hunt out a recipe.

Mine is onion, leek, stick of celery, carrot, couple of tomatoes and pack of cooked (but not vinegared) beetroot, fried to soften with black pepper, shake of caraway seeds and plenty of parsley and dill. Then add enough veggie stock to cover and bubble for half an hour, remove half and blend smooth then return to pan. For non vegans have with horseradish or Creme fraiche, and for non vegetarians a bit of kabanos sausage chopped into bite size pieces and fried. But the vegan version is yum by itself.

To add to Sparkly's list:

Spanish omelette - using gram flour batter instead of eggs
Socca
Haggis (instead of nut loaf - much better, IMO!)
Tempura - probably the cheapest meal I make
Pizza - 3 toppings - hummus; Pateole mushroom pate and pesto; rich tomato sauce with nutritional yeast (nooch)
Lasagne - sometimes layered with cooked potato (my favourite) instead of pasta
Lentils with rice; with cabbage; with potato
Roast dinner with stuffed mushrooms (stuffed with Pateole mushroom pate and pesto - just gorgeous!)
Seitan

I often make a huge pasta sauce on a Monday say - then add kidney beans and chunks of seitan with WI hot chilli sauce the next day - next add a tin of coconut milk and Thai spices and turn it into a Thai chilli non carne. On the fourth day I've been known to include the remnants in a pie.

Of all the vegan pestos I've tried, my favourite is Meridian - from my local HFS

The best vegan sausage I've found are made by Fry's - I also like their polony. Both are a bit expensive so I just have them as a treat. Used to like Linda Mac's - but discovered they use palm oil!

Sainsbury's and Morrison's soy mince are both quite acceptable (disclaimer: I only use these when my wife is sharing the meal. Generally, I just make a veg ragu.)

I have indeed! It's going ok... FDs are more like 800 cals but plan to rectify that next week. Not expecting miracles on the scales or anything but it's a start.

When I began, I went 6 months just doing 50% of my calories (1200!) on 2 days a week. Still lost a few pounds! Smile
