Any Brownie experts - need help please ...

I'm trying a Nigella recipe but my tin is about 4cm shorter than hers although width is the same. Sooooo ... dumbest question of the season coming up .... do they rise? I'll make the recipe by her quantities and won't use the entire mixture but haven't a clue how far to fill the tin.

Am going to do them first thing in the morning so hope that someone who can help is around between now and then

yep they do rise but not that much- what depth is your tin? i wouldn't fill it more than about half way but I have never made Nigella's brownies. I have the best brownie recipe in the world ever and no other ever comes close to it!!

About 4cm deep ... and I'm nervous. Last time I tried Brownies they were an unmitigated disaster. Sigh.

i think a lot of brownie recipes are not good and they can be quite tricky to get just right.

Does the Nigella recipe use melted chocolate cos I just don't think that works very well.

Is there no one on MN who has made Nigella brownies before?????????

I make Nigella brownies all the time. They don't really rise very much, so fill the tin to just short of the top. Her cooking times are very short - I have a v. fast oven but still have to add on 10 minutes. then once cooled leave them in the fridge for a bit so the gooey middle sets.

I'll do just that Prufrock. BTW - have you tried the White choc chip version in Feast? That's what I'm about to do. Soph28 - yes, melted chocolate and yes, I'd love to try your recipe next time round if you don't mind posting it. Thanks!

I have the nigella ones in the oven at the moment in the rght size tin... and after the 25 mins she says to cook them, they are still raw... always the way with Nigella recipes I find...

so PLEASE Soph can I have your recipe as I love brownies....

Millie, how did they go?
I'd like your cocoa brownie recipe too please Soph, I do a lot of spontaneous baking and DH can't be trusted with a bar of chocolate in the house and I prefer a fudgier brownie.
Delia Smith reckons the brownie recipe in her Winter collection is foolproof but I've not tried it (too many nuts and chocolate.)

Thank heavens for Prufrock's advice ... they did need the extra 10 mins and my oven is quite hot. They're yummy BUT the very middle was too squidgy - yet had they got any extra time, those at the outside would've been too dry. Still, they're nice!

I did the Delia ones last night though without nuts - I did double the recipe in 2 tins, and the one on the lower shelf came out very squidgy & broke up when I tried to get it off the greaseproof paper. It tastes gorgeous though so I'm going to break it into bits & have it with ice cream. We wre all gathered round the kitchen counter last night armed with teaspoons, eating the remains stuck to the paper.
