If an American recipe calls for "cube steak"............

What do I use? I had thought it was cubed chuck steak/round steak but after looking up the definition, I'm not sure if I should be using sirloin/fillet instead! Anyone know?

looks like it's rump, just tenderised

If it's a long slow recipe I'd use stewing / braising steak; if it's a quick-cooked recipe I'd use rump (rarely buy fillet or sirloin myself as rump is so much tastier)

MANY memories of minute steak. It is tough, trust me. Soak it in marinade a while, then beat the hell out of it. It's like skirt steak/fajitas.
