Potatoes need a lot of seasoning so I would use salt and white pepper rather than wine. Chives, thyme and rosemary all go well with leek and potato soup but not wine imo. Have a big glass of it instead

I never do add wine because I make leek and potato soup with cream and/or milk, and the wine would make it curdle. I just use loads of butter to soften the leeks, half a stock cube and milk or cream, seems to taste nice but I think a lot of it is how tasty the leeks are in the first place!

For extra taste how about adding croutons at the end - titchy bits of crispy fried bacon or cubed granary bread tossed in olive oil and parmesan and baked in the oven...?

liking the croutons........when do i add milk/cream? i prefer not to blend it...like it chunky!

x posted with Carmenere. Agree rosemary is lovely - but my vote would be "no" to chilli - don't think it would taste right somehow...?

I like it chunky too! - I kind of mash mine at the end so I get it thick but still lumps.

You can add the milk or cream at any point. I usually do it about 10 minutes before the end and let it heat through.

sorry - keep xposting! How confusing. I don't think tarragon would go v well but you could try. Personally I'd rely on the croutons. Or grate some cheese in at the end.
