Quick help - roasting veg?

I'm planning to cube and roast some veg with onion, garlic and herbs. Parsnips, squash, sweet potato, maybe some carrot if I can find any that's still good. Will celeriac work, too?

How long? At what temperature? I was thinking of cutting them up into 1cm or so dice. Do squash take longer than the rest? Or is it all about the same?

And then I was going to break some eggs on top ... how long will the eggs take, and at what temperature?

I usually do mine much bigger than dice, big lumps. yum. with olive oil and thyme

as for temp put them in with the roast maybe 40 mins before, keep an eye, leave them in for a couple of mins after while roast rests, if they need a bit longer

am perplexed by eggs though so will ignore that bit

Celeriac is gorgeous roasted.

I just mix it all up with some olive oil and herbs, then bung it in the oven - I usually put them in at 180 for about 40 minutes but use a larger size chunk than 1cm, I'd say something like 30 minutes would do for that size of dice.

Have no idea about the eggs - I wouldn't have thought they would take more than a few minutes though. When I've baked eggs before they've only taken 10 minutes or so, and on top of already hot food they would probably cook more quickly.

squash takes less time if anything.

I think your parsnips and carrots might take the longest... certainly the carrots so maybe cut them a little thinner. But otherwise do the lot for 45 mins-ish I reckon, turning once or twice. Do in two pans/trays maybe - will cook better.

Dont know about celeriac, and erm eggs??

I was planning to bake eggs on top. No "roast" involved. I appear to be "off" meat again. Figured roast veg with egg would pass muster as a meal to ILs, who are coming tonight?

Right, will get cutting etc. 10 mins for eggs should be fine.

what about poaching eggs then?

Just can't quite imagine baked eggs on top of roast veg.

But then I've never baked an egg so what do I know. I'll shut up.

do eggs separately I'd say

if you overcook them they'll be a bit less appealing

I used to do egg and chips in this style and it's always a tricky one to pull off

I made the oven egg and chips recipe from the Good Food mag a couple of months ago or so and it was very nice - can't see why adding some other veg wouldn't be good.

Heat oven to 220/gas 7. Cut unpeeled pots into thick chips, and scatter over sliced garlic amd rosemary leaves. Drizzle/toss with oil and season well. Roast for 35-40 mins, shaking tin halfway through.

Make two gaps in the chips and break an egg into each gap. Return to oven for 3-5 mins until the eggs are cooked to your liking (and I remember they really did not take very long).

Naw, I've never got my head around poaching eggs. I'll roast 'em on the veg.

A friend used to do eggs cooked on top of tomatoes, which was very very nice. Done in a pan on the hob, though, so not at all the same.

Anyway, they're on, can't see how it will go wrong, other than the bit where I have to take most of the veg out (as most of it is for a co-op thing tomorrow, and no egg is allowed there) ... I'll probably pull out a few scoops of veg for tonight into another pan and do the egg on that.

It came out fine. MIL asked "is this a Nigel Slater thing?" (as most things I cook are Nigel Slater things) and I said I just felt like doing it. It went down quite well, although I overcooked the eggs. Will take them out sooner next time. But MIL and FIL ate theirs, DS1 put his nose up, and DS2 said "I like this!" which he's never actually said - firstly because he doesn't say "I" he says "me", and secondly because he says "me no like!" instead.
