Can't you offer her some of whatever you are having or your leftovers from night before ? tbh for a long time dd ate betetr at lunchtime than dinner so I'd serve her more of a meal then.

There are loads of dinners you can freeze-
make mini shepards pies/lasagne

chicken with sweet potato

Make Various pasts dishea - cheese/tomato and add things like ham or mushroom and freeze in little pots. Add them to freshly cooked pasta or rice.(i even mix them with potato)

potato and veg corgettes

Fish cakes

Cauliflower cheese

Fish with a white sauce and veg

My DD2 is 18mths, I found that when she wasn't eating her dinner I dropped her afternoon milk and she started to eat more dinner, She wasn't having it till 3.00 though not at lunch time.

My ds is 16 months. He has milk when he wakes up in the morning. Then weetabix or porridge and toast for breakfast.
Then usually something like pasta with tomato sauce, or spagetti on toast, or soup and bread for lunch.
Then tea is something like mashed up chicken, veg, potatoes followed by fruit or a yoghurt.

He's difficult to cook for as he prefers dinners like mashed up vegetables to anything like chicken nuggets, fish fingers etc.

I find soups to be a life saver - either bought or home made - just put everything you have in the fridge into a pan, boil up and blend. Add lentils or small pasta shapes to bulk it up. Then serve it with bread or toast.
Anything that's easy to eat (i.e. not much effort to chew!) makes ds happy!
Soup is easy to freeze and defrost too.

I also make mince or bolognaise sauce (also good to freeze) with tiny veggies in it eg chopped carrots, and then mix it with creamy mashed potatoes and he loves that.

I also find that he'll eat more if it's off my plate! So quite often if he won't eat his tea, I'll give in, then just put more on my plate and feed him with my fork. I'm sure he thinks he shouldn't be eating it so that's why he does! Seems to do the trick!

And if all else fails I let him have some fruit, crisps or chocolate and think I'll try again tomorrow!

Good luck

My ds has just turned one and he has quite a good varied diet.

He usually has weetabix with fruit for breakfast with yoghurt.

Lunch I try and give him something he can eat himself - sandwiches, toats, bacon cut into chunks, mini babybel, mini pizza, potato wedges etc etc

Dinner he usally has what we eat - curry, chilli, spag bol, macaroni cheese, roast, scrambled egg, sausage and mash, nuggets.

At this age they can eat almost anything - I usually make spag bol from scratch but we make lasagna using jar sauces and we give him that. i think they are ok in moderation, so long as your not always using them because of the salt content.

To make spag bol -

brown some mince, onion and garlic
add carrots, celery, red pepper, mushrooms, 2 cans of tin tomato's a couple of stock cubes and some tomato puree and then leave it to simmer for about 15 / 20 mins

Have you tried looking at the Annabel Karmel book - it's got loads of easy recepies in it - ones you can make for the whole family.
